How to Make Cheddar’s Broccoli Cheese Rice Casserole

Step One: Set your oven to 350 degrees F (175°C) and grease a baking dish. Prepare the rice according to package instructions. Steam or microwave the frozen broccoli until tender, then drain any excess moisture.

Step Two: In a saucepan over low heat, melt the butter. Add the Velveeta cheese and stir until smooth and creamy. In a large bowl, combine the cooked rice, broccoli, melted cheese mixture, cream of mushroom soup, and milk. Stir until everything is well blended.

Step Three: Pour the mixture into the prepared baking dish and spread it evenly. Crush the Ritz crackers and sprinkle them over the casserole for a buttery, crispy finish. Place in the oven and bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown. Let the casserole cool slightly before serving. Enjoy this creamy, cheesy comfort food with your favorite main dish!

Cheddar’s Broccoli Cheese Casserole Recipe Tips

  • Use Fresh Broccoli – While frozen broccoli works fine, fresh broccoli can provide a firmer texture and fresher flavor. Just blanch it before adding to the casserole.
  • Customize the Cheese – Feel free to mix different cheeses like sharp cheddar, mozzarella, or even gouda for a more complex flavor. Velveeta provides creaminess, but adding other cheeses gives more depth.
  • Don’t Overcook the Rice – Make sure the rice is cooked but not mushy, as it will continue cooking in the casserole. Fluff it up before mixing it in with the other ingredients.
  • Add More Crunch – For extra crunch, you can add an additional layer of crushed Ritz crackers on top halfway through baking for a golden, crispy finish.
  • Make Ahead – This casserole can be assembled a day ahead of time and refrigerated, making it a perfect dish for busy days or gatherings. Just bake it when you’re ready to serve!
  • Adjust the Creaminess – If you prefer a creamier texture, add a bit more milk or even sour cream to the mix. Just be sure not to add too much, or it may affect the casserole’s consistency.

Storing

  • Storing: Once cooled, store your leftover Cheddar’s Broccoli Cheese Casserole in an airtight container in the refrigerator for up to 3-4 days. For the best texture, reheat only the portion you plan to eat.
  • Freezing: To freeze, let the casserole cool completely, then wrap it tightly in plastic wrap and foil before placing it in a freezer-safe container. It will stay good for up to 3 months; just be sure to thaw it in the fridge overnight before reheating.
  • Reheating: Reheat leftover casserole in the microwave for 1-2 minutes, or until heated through. Alternatively, place it in the oven at 350°F (175°C) for 10-15 minutes, covered with foil to prevent the top from over-browning.
