How To Make Air Fryer Spanish Manchego Grilled Cheese

Step One: Preheat the air fryer to 360°F for five minutes. Meanwhile, slice the Manchego and layer it on two slices of sourdough bread, making sure the entire surface is covered—even if the cheese breaks or crumbles.

Step Two: Place the second slice of bread on top of the cheese, brush with melted butter, and transfer the sandwich to the air fryer. Cook at 360°F for five minutes until golden and crispy.

Step Three: Carefully flip the sandwich, brush the top with more melted butter, and cook for an additional four minutes at 360°F until evenly golden.

Air Fryer Spanish Manchego Grilled Cheese Recipe Tips
- Even Cheese Coverage: Break or crumble the Manchego to cover the entire slice of bread—don’t worry if it looks uneven, it melts perfectly.
- Preheat Matters: Preheating the air fryer ensures the bread crisps evenly and the cheese melts without sticking.
- Butter Smartly: Brush melted butter on both the top and bottom slices for golden, crispy results.
- Monitor the Cook Time: Every air fryer cooks differently—start checking a minute or two before the timer ends to avoid over-browning.
- Optional Add-Ins: Add thin tomato slices, roasted peppers, or a touch of honey for a flavor twist.
- Rest Before Slicing: Let the sandwich sit for a minute after cooking to avoid cheese spilling out when cutting.
Storing, Freezing and Reheating Instructions
- Storing: Let the grilled cheese cool completely, then wrap it tightly in plastic wrap or place it in an airtight container. Store in the refrigerator for up to 2 days.
- Freezing: Wrap the sandwich tightly in foil or freezer-safe plastic and place in the freezer. It can be frozen for up to 1 month.
- Reheating: Reheat in the air fryer at 350°F (175°C) for 3–5 minutes until the cheese melts and bread is crispy. Alternatively, warm in a skillet over medium heat for a few minutes per side.

Air Fryer Spanish Manchego Grilled Cheese Recipe Faqs
Can I use a different type of bread? Yes! Sourdough is recommended for its sturdiness, but you can also use ciabatta, multigrain, or even sandwich bread. Just keep in mind softer breads may need a slightly shorter cook time.
Can I substitute the Manchego cheese? Absolutely. A sharp cheddar, Gruyère, or a mix of cheeses will work, but Manchego gives the sandwich its signature Spanish flavor.
How do I prevent the cheese from spilling out? Spread the cheese evenly across the bread and slightly press the sandwich together. Using slices instead of shredded cheese can reduce spilling.
Can I make this recipe vegetarian? Yes, it’s naturally vegetarian! Just avoid adding any meat toppings.
Can I freeze the sandwiches? You can freeze unbuttered sandwiches. Wrap tightly in plastic and freeze for up to 1 month. Air fry straight from frozen, adding a few extra minutes to the cook time.
Can I make multiple sandwiches at once? Yes, but make sure they fit in a single layer in your air fryer basket. Cook in batches for the best crispy results.
What’s the best way to reheat leftovers? Reheat in the air fryer at 360°F for 2-3 minutes until crispy. Avoid the microwave to prevent soggy bread.
