Air fryer mushrooms are so easy, and they go great with melted cheese! They’re even better when served with some grilled bread slathered in butter. This recipe is perfect if you have friends coming over or just want something simple yet tasty to snack on during your movie marathon this weekend

As most of us know who owns an Air Fryer, there is nothing better than an Air Fryer Grilled Cheese. But what about elevating it even further?
I used some fresh portobello cheese today and added some great herbs, thyme, and green onions! There is nothing better than slow-roasted (in the Air Fryer, of course, vegetables), and this recipe will not disappoint.
I love a great sandwich, and there is nothing better than a quick but delicious lunch or dinner that you can prepare in minutes! Some of my favorite Air Fryer Sandwiches are AIR FRYER CRAB CAKE SANDWICHES, AIR FRYER SHRIMP PO’BOY, AIR FRYER GARLIC BREAD PIZZA TOAST, and AIR FRYER HOT DOG TAQUITOS.
Ingredients Needed For Air Fryer Mushrooms & Thyme Grilled Cheese
- Sour Dough Bread
- Portobello Mushrooms
- Provolone Cheese
- Monterey Jack Cheese
- Butter
- Thyme
- Green Onions
- Garlic Powder
- Red Pepper Flakes
- Black Pepper
- Salt
How To Make Air Fryer Mushrooms & Thyme Grilled Cheese
In an oven-safe dish that will fit in your air fryer, melt 3 tablespoons of butter at 375 degrees F, air fryer setting.
While your butter is melting, thinly slice the portobello mushrooms and cut the white portion of the green onion, about two to three inches from the bottom of your green onions off. Then thinly chop the green tops. Take the white parts of the green onions, slice off the very end part, then slice lengthwise to make thin slices of the white-green onion.
Once the butter is melted, add in your sliced portobello mushrooms the whites of your green onions, salt, pepper, red pepper flakes, garlic powder, and the three sprigs of thyme. Mix so that the mushrooms are coated in butter, and the thyme is under the mushrooms.
Place the mushroom mixture into the air fryer at 375 degrees F, air fryer setting, for approx. 8 minutes stirring occasionally. The mushrooms are done when they are golden and a little bit crisp.
While the mushrooms are cooking, butter one side of each slice of bread.
With the butter side down, add a layer of provolone and a layer of Monterey Jack on top of 2 slices of the bread. Then sprinkle a small amount of the green onions.
Once that mushroom mixture has finished cooking, divide it into two and layer it on top of the cheese and bread.
Place the second layer of green onions, Monterey Jack, and Provolone cheese on top of the mushrooms. Top with a final piece of bread with the buttered side facing up.
Place a toothpick into the sandwich before placing it in the air fryer to prevent the bread from flying off.
Preheat your air fryer to 400°. Then place your sandwiches into the air fryer. Fry the sandwiches at 400° for 4 to 5 minutes, then carefully flip the sandwiches over and finish for another 3 to 4 minutes until both sides are nice and golden and crisp, and the cheese has fully melted. If the cheese does not seem melted enough after the first 4-5 minutes, or if your bread is browning too quickly, reduce the heat on your AF to 375°.
Pro Tips:
- This is a rich “grown-up” grilled cheese. Salty, tangy, umami, and herbaceous!
- Any mushrooms should work, shitake would be wonderful, as would white button mushrooms.
- Mix and match cheeses, mozzarella, muenster, or pepper jack would be great too!
- This recipe will work in any Air Fryer Basket or Oven Model. I have made this several times in the Ninja Foodi, Instant Pot Vortex, Instant Pot Crisp Lid, and Mealthy Lid.
Serving Suggestions:
I often pair this great and hearty sandwich with nothing more than a large garden salad or a hot cup of Instant Pot Tomato Soup. This is a great and comforting sandwich! So good!
