Air Fryer Cranberry and Walnut Bundt Cake is a great and easy breakfast recipe. It’s one of my favorites, and it’s light, tender, and fluffy. There is nothing better for breakfast than a piece of cake!

This cake is so good! You can either make it in a loaf pan or an in a Bundt cake pan. I made it twice, once in both pans, and it was so good!

  • 3/4 cup butter, room temperature
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup walnuts, diced
  • 2 cup cranberries, diced, fresh or dried

Instructions

  • In a large mixing bowl, cream together the 3/4 cup butter and 1 1/4 cup granulated sugar
  • Fold in the 2 large eggs, and mix well.
  • Mix in the 1 cup all-purpose flour and 1 teaspoon baking powder mix well.
  • Fold in the diced 1/2 cup walnuts and 2 cup cranberries
  • Spray your Bundt pan generously with olive oil or cooking spray.
  • Pour the prepared batter into the prepared pan.
  • Set in the air fryer and set the air fryer temperature to 330 degrees F and set cook time for 20-25 minutes. (air fryer setting)
