Air Fryer Cheesy Hasselback Potatoes are so great; my kids really loved them. I jazzed them up today with some cut pieces of cheese and added some butter and spices for a great and easy air fryer side dish.

Where Do Hasselback Potatoes Come From?

If you are not familiar with his potato technique, it comes all the way from Sweden back in the 1950s.

A Swedish chef at a now-famous restaurant in Stockholm called the Hasselbacken made these potatoes!

Hence the Hasselback Potato was invented, the rest is history.

How To Cut Hasselback Potatoes

Today, I used two methods to make the slices; First, I used the Hasselback Tool, which I purchased on Amazon. You can order one from Amazon,

And then I use the Chop Stick Method. What this does is guide you where to cut the potato without cutting all the way through.

What Kind of Potatoes Work Best for Hasselback?

The best potatoes are either Russel potatoes or Yukon potatoes. But you can even make these with sweet potato or red potatoes.

You want a potato that will hold it’s shape as you cut it.

How to Season Hasselback Potatoes

Today, the star of the show is the cheese slices, and they do not need a lot of seasonings as a result.

But if you wanted to do plain Hasselbakcs, I would drizzle them with olive oil, add some salt, black pepper, rosemary, and thyme.

You would get a lot of flavor from the roasted Hasselback.

AIR FRYER CHEESY HASSELBACK POTATOES

Ingredients Needed:

  • Russet Potatoes
  • Butter
  • Cheddar Cheese
  • Salt
  • Black Pepper
  • Dried Chives
  • Dried Parsley
Hasselback Potatoes

In a small bowl, melt the butter, add salt, black pepper, parsley, and chives. Mix well, then use a pastry brush and brush over the potatoes.

Set into the air fryer basket, and set the temperature to 350 degrees F for about 25-30 minutes. I basted them frequently with the melted butter and seasoning mixture. Once the potatoes are fork-tender, add your cheese slices.

Place the slices of cheese into the cuts, I added them to every other slot. Brushed again with the butter and seasoning mixture and placed back into the air fryer for another 2-3 minutes. As soon as the cheese has melted, remove them.

WHAT POTATOES MAKE THE BEST HASSELBACK POTATOES?

I love a good starchy potato for this recipe, some of my favorites at Idaho and Russet Potatoes.  The starch in the potatoes actually does better crisping up in the air fryer. 

If you are looking for an alternative, you can make Mini Air Fryer Hasselback Potatoes by using mini potatoes. The same technique will work. 

For Thanksgiving, I love making Air Fryer Hasellback Sweet Potatoes; they are amazing. Fill the crevices with butter and brown sugar, amazing!

CAN YOU MAKE HASSELBACK POTATOES WITH RED POTATOES?

yes, if you only have red potatoes, make them with red potatoes. 

Because red potatoes are not very starchy, the outside might not get very crunchy. Make sure to add some extra olive oil and salt on the outside, which will help them crisp up in the air fryer.

SHOULD I PEEL THEM?

No, you can if you want to, but the best way to serve them is with the skin on. I find that they stay together much better than when you remove the skin. 

WHAT IS THE HASSELBACK TECHNIQUE?

Hasselback is a very old-fashioned cooking method in which chicken or potatoes are sliced, about 2/3 rds the way through in thin, even layers. Usually, in between the slices, you add additional toppings or flavorings or even stuff additional items to season the food.

As a cooking technique, it’s nothing new it has been just reintroduced since the air fryer does a great job at cooking food.

WHAT OTHER THINGS COULD I PUT IN BETWEEN THE POCKET OF THE POTATOES?

Here are some of my favorite fillings you can add anything that you want. These are some of the most popular ones.

  1. Slices of cheddar cheese.
  2. Garlic and butter
  3. Loaded potatoes with cheese, sour cream, bacon bits, sour cream, and chives.

  • 4 medium Russet potatoes
  • 4 tablespoons butter, melted, unsalted
  • 8-10 slices cheddar cheese, cut into slices that fit in between the slots
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chives, dried
  • 1 teaspoon parsley, dried

Instructions

  • Cut the potatoes.
  • In a small bowl, melt the butter, and add salt, black pepper, parsley, and chives. Mix well, then use a pastry brush and brush over the potatoes.
