How To Make Air Fryer Blueberry Galette

Step One: Lay the puff pastry directly in the air fryer basket to make assembling easier. In a small bowl, toss the blueberries with sugar, lemon juice, and cornstarch until well combined.

Step Two: Spoon the blueberry mixture into the center of the pastry, adjusting the amount based on the size of your galette. Use all the filling for a large galette, or divide it evenly if making smaller ones.
Step Three: Fold the pastry edges up and over the filling, working your way around and gently pressing to secure. In a small bowl, whisk the egg with 1 tablespoon of water to make the egg wash.
Step Four: Brush the folded pastry with the egg wash, making sure to coat the edges. Sprinkle with sparkling sugar, then air fry at 330°F for 15–20 minutes, until golden brown and cooked through.

Air Fryer Blueberry Galette Recipe Tips
- Keep Puff Pastry Cold: Work quickly so the dough stays chilled. Cold pastry puffs better and holds its shape.
- Don’t Overfill the Center: Too much filling will spill out and make a mess in the basket. Leave a border so you can fold the edges easily.
- Line the Basket if Needed: Use parchment paper made for air fryers to prevent sticking and make cleanup easier.
- Seal the Edges Well: Gently press the folds so the filling stays tucked inside while cooking.
- Check Early: Air fryers vary. Start checking around 15 minutes to avoid over-browning.
- Cool Before Slicing: The filling thickens as it cools, making cleaner slices.
- Serve Warm: Add a scoop of vanilla ice cream or whipped cream and call it a day.
Storing, Freezing and Reheating Instructions
- Storing: Let the galette cool completely, then store it in an airtight container in the refrigerator for up to 4 days. For best texture, avoid covering it while still warm or the crust will soften.
- Freezing: Wrap the cooled galette tightly in plastic wrap and foil, then freeze for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheating: Reheat slices in the air fryer at 320°F for 3–5 minutes until warmed through and crisp. You can also warm it in the oven, but skip the microwave if you want to keep the crust flaky.
