How To Make Air Fryer Blueberry Coffee Cake

Mix the egg, milk, mix, and oil together.  Then fold in 1/2 cup of blueberries (optional)

Then pour the prepared mix into an air fryer-safe pan that will fit inside your air fryer. Place eh pan into the air dryer and cook for 12 to 15 minutes at 320 degrees F, air fryer setting.

ROOM TEMPERATURE INGREDIENTS:

For best results, your egg should be at room temperature before adding it to our blueberry batter. This way, your blueberry coffee cake will have a better texture.

CAN THIS RECIPE BE MADE INTO CUPCAKES?

Why yes, it can! This recipe will make about 10 to 12 regular-size cupcakes. The cooking time will not change by much.

DO YOU HAVE A SUBSTITUTE FOR EGGS?

You can easily change out the egg for an egg substitute. Use the equivalent as called for in the recipe.

WHAT PAN SHOULD I USE?

While we all have numerous pans in the cabinets and pantries in our kitchen, I would highly recommend using a thinner pan that you are used to cooking with. That way, the entire cake (including the middle) gets cooked.

STORAGE INSTRUCTIONS:

For best results, store the blueberry coffee cake in an airtight container on the counter for 2 to 3 days.

You should wrap and freeze it with aluminum foil for any longer storage before putting it into a plastic freezer bag for storage. It will last for 1 to 2 months in the freezer. Thaw at room temperature or on the counter.

  • 1 package Jiffy Blueberry Muffin Mix
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoon oil, vegetable or canola oil
  • 1 cup blueberries, fresh

Instructions

  • In a small mixing bowl, mix the muffin mix, milk, egg, and oil.
  • Mix well
  • Fold in the blueberries if using.
  • Pour the batter into a prepared (sprayed with olive oil or non-stick cooking spray)
  • Set in the air fryer at 320 degrees F (air fryer setting) for 12 to 15 minutes.
  • Plate, serve and enjoy!

  • Baking Pan, Any baking pan that is slightly smaller than your air fryer basket, so the hot air can circulate around the pan.
