Step One: Preheat the air fryer to 320 degrees F (160 degrees C), for 3-5 minutes. Then, place a silicone liner in the basket. Wash and pat dry chicken thighs.
Step Two: In a large bowl, add chicken thighs with bell pepper and broccoli. Season with oregano, parsley, thyme, garlic, oil, salt, and pepper. Cover with a foil and marinate for about 10 minutes while the air fryer is heating up.
Step Three: Remove foil and transfer all the chicken with vegetables in the basket. Place in the air fryer basket, and set cook time for 20-25 minutes. Allow the chicken to rest for 5-10 minutes before serving.

- This recipe will work in any Air Fryer Basket or Oven Model. I have also prepared and cooked this recipe in the Ninja Foodi, Instant Pot Vortex, or Instant Pot Crisp Lid. The recipe will work the same. The cooking time may vary slightly.
- I would recommend lining your basket with a silicone reusable air fryer liner. If you do not have any, you can omit or spray your basket with cooking spray. I would not recommend using parchment, and do not preheat your air fryer with a piece of parchment paper, as it will burn.
- Preheating the air fryer will give you a great sear on the chicken thighs and the vegetables. Follow your manufacturer’s instructions on preheating. I generally set the preheat to the same temperature as in the recipe, heat for 5 to 8 minutes, and then add my food.
- Do not crowd the air fryer basket. Otherwise, the chicken thighs will not cook up correctly.
- Shake or use a pair of tongs to move your food around while it cooks up for a perfect dish every single time.

- 4 chicken thighs, 7.05 oz – 10.58 oz (200 – 300 g) each, bone-in, skin on
- 1 medium red bell pepper, sliced
- 1 cup broccoli, 3.52 oz | 100 g, defrost and drain
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 2 garlic cloves, peeled and chopped
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon Kosher salt, to taste
- 1/4 teaspoon black pepper, to taste
Instructions
- Preheat the air fryer to 320 F | 160 C and place a reusable silicone liner in the basket.
- Wash and pat dry chicken thighs.
- In a large bowl, add chicken thighs with bell pepper and broccoli. Season with oregano, parsley, thyme, garlic, oil, salt, and pepper. Cover with a foil and marinate for about 10 minutes while the air fryer is heating.
