Air Fryer Banana Nut Muffins–My kids absolutely love this muffin. Easy, and I love using my ripe bananas in it—the perfect breakfast and so budget-friendly.
If you have not made air fryer muffins, you are so missing out. I tell my friends and family that they are bakery quality, meaning they are good enough to sell at a bakery. And trust me, I’m not a baker, by heart. But these are so easy, and my kids gobble them up.
So, if you have some ripe bananas that you want to use up, this is a great recipe, and you will get an excellent quality banana muffin.

Banana nut muffins are classic comfort food. They’re easy to make and delicious with coffee or tea. This recipe is perfect for beginners, and it yields twelve muffins. You can customize the recipe by adding raisins, chocolate chips, or nuts.
Ingredients Needed For Air Fryer Banana Nut Muffins
With only a few simple ingredients, you can make a delicious batch of muffins right in your air fryer. All you need are:
- Bananas: This banana muffin has so many bananas in them. They are the star ingredients. Use ripe or overripe bananas for the best flavor! It’s almost like eating a banana bread muffin!
- Butter: Use room temperature unsalted butter for the best flavor. If you only have salted butter, omit the salt in the recipe.
- Granulated Sugar: I used white sugar, but you can easily switch it out for born sugar if you want a deeper flavor.
- Egg: I used room temperature, large eggs.
- Pure Vanilla Extract: Use only pure vanilla extract for fantastic flavor!
- Baking Soda: This will help your muffins rise and make them airy and delicious!
- Baking Powder: Check the expiration date. You only want to use fresh baking powder!
- Ground Cinnamon: Nothing goes better with bananas than ground cinnamon!
- Salt: Omit if using salted butter.
- All-Purpose Flour: Use regular or gluten-free all-purpose flour
- Walnuts: Use diced or crushed walnuts. You can also use pecans.
How To Cook Banana Nut Muffins In Air Fryer
Start by mixing the bananas, butter, sugar, egg, vanilla extract, baking soda, baking powder, ground cinnamon, and flour in a large mixing bowl.
Mix until smooth. Fold in the walnuts.
Spray your muffin tin with non-stick cooking spray. Spread your batter into the prepared pan, and place the tin into your air fryer basket. Set the temperature to 320 degrees F for 12 minutes.
After 12 minutes, my muffins were excellent. If they are not, add 2 minutes. Check for doneness.
Pro Tips:
- Ripe Bananas: Make sure you have a lot of brown spots on your bananas. Otherwise, they will not be able to give off enough sweetness and flavor in the muffins.
- Fresh Ingredients: Make sure that all of your ingredients are fresh. This way, you get the best flavor!
- Nuts To Use: This is one of my favorite things to make for breakfast on lazy mornings. You can use whatever nuts you like, but I find that chopped walnuts give it just enough crunchiness without being overwhelming!
- Timing: Since every air fryer is slightly different, it is best to watch your muffins as they cook up. Remove them when you stick a toothpick into the center, and it comes out clean!

Do I need To Preheat The Air Fryer?
No, I do not usually preheat the air fryer unless I want a sear or I make a dessert that needs to rise. Since I am using baking soda in this recipe, they will naturally rise without the need for preheating.
How To Store:
Storing: Like most muffins these are best on the day you air fry them. If you have any leftovers, let them cool to room temperature and place them in an airtight container. Stored at room temperature they will last for 2 to 3 days.
Freezing: If you wan you can make a double or even triple batch of this recipe, and then place the cooled muffins into a freezer bag or freezer-safe container. Where they will last for 1 to 2 months. You can either defrost them overnight in the refrigerator or keep them at room temperature until thawed. You can reheat muffins in the air fryer or microwave, heating until warmed through.
