Description

Air Fryer Banana Nut Muffins – soft, moist muffins packed with ripe bananas and crunchy nuts. Quick and easy to make, perfect for breakfast, brunch, or a wholesome snack.

Ingredients 

  • 3 medium bananas, ripe
  • 1/3 cup butter, unsalted & melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup walnuts, or pecans

Instructions

  • Start by mixing the 3 medium bananas, 1/3 cup butter, 3/4 cup granulated sugar, 1 large egg, 1 teaspoon pure vanilla extract, 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon ground cinnamon, 1/2 teaspoon salt, and 1 1/2 cups all-purpose flour together in a large mixing bowl.
  • Mix until smooth.
  • Fold in the 1 cup walnuts.
  • Spray your muffin tin with non-stick cooking spray.
  • Spread your batter into the prepared pan, and place the muffin tin into your air fryer basket. Set the air fryer temperature to 320 degrees F and set cook time for for 12-15 minutes.
