Ingredients You’ll Need

  • Yukon Gold potatoes — My favorite for this. Waxy enough to hold their shape, starchy enough to go fluffy inside. Leave the skins on; that’s where a lot of the crisp comes from.
  • Olive oil — Helps the seasoning stick and drives browning. Avocado oil or grapeseed oil work just as well if you want a higher smoke point.
  • Dry ranch seasoning mix — One standard 1-ounce packet, or 3 tablespoons of homemade. Store-bought is perfectly good here.

Make Your Own Ranch Seasoning

If you’re out of packets — or you want to control the salt — whisk together:

  • 2 tablespoons dried parsley
  • 1 tablespoon dried dill
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon dried chives
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Makes about 3 tablespoons — exactly what this recipe needs. Double or triple it and keep a jar in the pantry.

How to Make Air Fryer Ranch Potatoes

Step One: Scrub the potatoes well and dry them thoroughly with a kitchen towel. Cut into even 1-inch cubes. Even is the operative word — mismatched sizes mean some pieces burn while others stay raw.

Step Two: Add the potatoes to a large bowl. Drizzle with olive oil and toss until every piece has a light sheen.

Step Three: Sprinkle the ranch seasoning over the top and toss again until evenly coated. Oil first, then seasoning — that order matters, because the oil is what makes the seasoning stick instead of falling to the bottom of the bowl.

Step Four: Preheat the air fryer to 400°F (200°C) for 3–5 minutes. Spread the potatoes in the basket in a single layer. Work in batches if you have to — this is not the place to save time.

Step Five: Air fry at 400°F (200°C) for 18–20 minutes, shaking the basket every 6–7 minutes. They’re done when the edges are deep golden and a fork slides in with no resistance.

Pro Tips for the Crispiest Ranch Potatoes

  • Dry your potatoes. Surface water turns to steam, and steam is the enemy of crisp. Pat them properly dry after washing.
  • Cook at 400°F. Lower temperatures give you soft, pale potatoes. 400°F is where the browning happens.
  • Single layer, always. Overlapping potatoes steam each other. Two batches of crispy beats one batch of soggy every single time.
  • Optional cold soak. For next-level crisp, soak the cubes in cold water for 15 minutes to pull out surface starch — then dry them completely before oiling.
  • Skip the cooking spray. The potatoes are already oiled, and aerosol propellants degrade the nonstick coating in your basket. Use an oil mister if you want extra insurance.
  • Salt at the end, not the start. Ranch packets are already salty. Taste first.
  • Know your air fryer. Models vary a lot. Start checking at 16 minutes.

  • Bacon ranch — Crumble 4 slices of cooked bacon over the top before serving.
  • Spicy ranch — Add ½ teaspoon cayenne or a tablespoon of hot sauce to the oil.
  • Garlic parmesan ranch — Toss the hot potatoes with ¼ cup grated parmesan and 2 minced garlic cloves.
  • Loaded — Cheese, bacon, sour cream, green onions. Now it’s a whole meal.
  • Add vegetables — Broccoli, cauliflower, or onion wedges cook on roughly the same schedule.
  • Italian dressing mix — A straight one-for-one swap for the ranch packet.

Oven Method (No Air Fryer)

Toss the potatoes exactly the same way. Spread on a parchment-lined baking sheet in a single layer and roast at 425°F for 25–30 minutes, flipping once at the halfway mark, until golden and fork-tender.

Storing and Reheating

  • Refrigerate: Store leftovers in an airtight container for up to 4 days.
  • Reheat: The air fryer is the only reheat worth doing — 3–4 minutes at 375°F brings the crisp right back. The microwave works but leaves them soft.
  • Freeze: Not recommended. Cooked potatoes turn mealy and watery after thawing.
  • Make ahead: You can cube and cold-soak the potatoes up to a day early. Keep them submerged in water in the fridge, then drain and dry thoroughly before cooking.

What to Serve With Ranch Potatoes

Frequently Asked Questions

Do I need to peel the potatoes? No — and please don’t. The skins crisp up beautifully and hold a lot of the flavor. Just scrub them well.

Do I have to preheat my air fryer? Yes, for this one. Dropping potatoes into a cold basket means they spend the first several minutes steaming instead of searing, and you lose the crisp.

Why aren’t my potatoes crispy? Three usual suspects: the potatoes were wet when they went in, the basket was overcrowded, or the temperature was too low. Dry them, single-layer them, and stay at 400°F.

Can I use ranch dressing instead of the dry mix? You can, but the texture suffers — bottled dressing is mostly water and it will steam your potatoes. If it’s all you have, use 3 tablespoons and skip the olive oil, and expect a softer result. Dry mix is much better here.

How long do potatoes take in the air fryer? One-inch cubes take 18–20 minutes at 400°F. Halved baby potatoes take about the same. Larger chunks need 22–25.

Can I make these in a Ninja Foodi or Instant Pot air fryer? Yes. Any basket-style or oven-style air fryer works. Oven-style models with trays sometimes need an extra 2–3 minutes and a tray rotation halfway through.

Are these gluten free? Check your ranch packet — some contain wheat-based fillers. Homemade seasoning (recipe above) is naturally gluten free.

Can I double the recipe? Yes, but cook in batches. Doubling into one crowded basket will steam the potatoes. Hold the first batch in a 200°F oven while the second cooks.
