Ingredients
1½poundsYukon Gold potatoes, scrubbed and cut into 1-inch cubes (about 4 medium)
2tablespoonsolive oil
3tablespoonsdry ranch seasoning mix, or one 1-ounce packet
1teaspoonKosher salt, to taste (optional — ranch mix is already salty)
1tablespoonfresh parsley or chives, chopped (optional, for garnish)
Instructions
Scrub the potatoes and pat them completely dry. Cut into even 1-inch cubes. Drying them well is what gives you crispy edges instead of steamed ones.
Add the potatoes to a large bowl, drizzle with the olive oil, and toss until every piece is lightly coated.
Sprinkle the ranch seasoning over the potatoes and toss again until evenly coated. Oil first, then seasoning — the oil is what makes it stick.
Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
Spread the potatoes in the basket in a single layer. Cook in batches if needed — do not overcrowd.
Air fry at 400°F (200°C) for 18–20 minutes, shaking the basket every 6–7 minutes, until the edges are deep golden brown and a fork slides in easily.
Taste and add salt if needed. Garnish with parsley or chives and serve hot.
