- 1 tablespoon olive oil
- 1 onion, diced
- 2 teaspoon garlic, minced
- 1 pound boneless, skinless chicken breast,, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup white rice, cooked and cooled.
- 1 cup heavy cream
- 2 1/2 cup chicken broth, divided
- 2 cups broccoli florets
- 1 cup cheddar cheese, shredded
- 1/4 cup panko
- 2 tablespoons butter, cut into pieces
Instructions
- Season the diced chicken with salt and black pepper. Heat the olive oil in a large skillet over medium heat. Add the diced onions and sauté until translucent, about 4-5 minutes.
- Add minced garlic and diced chicken to the skillet. Cook until the chicken is fully cooked.
- Stir in the white rice, heavy cream, and 1 cup of chicken broth. Simmer for about 10 minutes until the rice is fully cooked.
- Add the remaining chicken broth, broccoli florets, and shredded cheddar cheese. Cook for another 10 minutes until the broccoli becomes tender.
