Description

Make this easy and healthy Air Fryer Chicken and Broccoli Casserole with tender chicken, creamy sauce, and a crispy, cheesy topping. Perfect for a quick, comforting meal!

Ingredients 

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 teaspoon garlic, minced
  • 1 pound boneless, skinless chicken breast,, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup white rice, cooked and cooled.
  • 1 cup heavy cream
  • 2 1/2 cup chicken broth, divided
  • 2 cups broccoli florets
  • 1 cup cheddar cheese, shredded
  • 1/4 cup panko
  • 2 tablespoons butter, cut into pieces

Instructions

  • Season the diced chicken with salt and black pepper. Heat the olive oil in a large skillet over medium heat. Add the diced onions and sauté until translucent, about 4-5 minutes.
  • Add minced garlic and diced chicken to the skillet. Cook until the chicken is fully cooked.
  • Stir in the white rice, heavy cream, and 1 cup of chicken broth. Simmer for about 10 minutes until the rice is fully cooked.
  • Add the remaining chicken broth, broccoli florets, and shredded cheddar cheese. Cook for another 10 minutes until the broccoli becomes tender.
  • Transfer the mixture to a baking pan. Sprinkle panko breadcrumbs evenly over the top and add butter pieces. Air fry at air fryer temperature at 350 degrees F, for 5-10 minutes, or until the top turns golden brown.
