This Instant Pot Blueberry Cake comes out moist, and delicious, bursting with fresh berries. And the best thing is will cook up, while you are busy doing a hundred different things!
Instant Pot Blueberry Cake Recipe
I am a fan of all t thing cake, when I first started using my Instant Pot, I used a single Boxed Cake Mix, and came up with my famous recipe for Instant Pot Boxed Cake Recipe, and it was amazing! Everyone loves it, so when I was looking for a new holiday recipe, I turned to this, and this recipe creates an amazing dessert!
Over the years, if you have been following me, I have made several Instant Pot Desserts, some of my favorites are Instant Pot Brownies, Instant Pot Jiffy Cornbread Muffins, and of course Instant Pot Cheesecake.
If you have never made a cake in your Instant pot, you are mixing it out. This cake is light, airy, and bursts with flavor! And if you have a Ninja Foodi, this recipe will work exactly the same!
Ingredients Needed For Instant Pot Blueberry Cake
If you’re looking for an easy dessert to make, this blueberry cake is perfect! There are only a few ingredients required and it can be made in the Instant Pot. The best part is that it’s delicious and everyone will love it! So, gather up these simple ingredients and get started on your cake. You won’t regret it!
This is one of my favorite blueberry recipes, and it makes for an amazing dessert! A perfect dessert for a great fall evening!
Remember all of the details are below in the printable recipe card, as well as the nutritional information.
- Blueberries: I used fresh blueberries, but you can use frozen, which I would not defrost. (or even pie filling) The blueberries bring out the natural sweeteners of the cake!
- Butter: Use unsalted butter.
- Spices: I used ground cinnamon, but you can add some lemon juice or lemon zest, into the cake mix, for some added flavor, as well as vanilla extract.
- Cornstarch: Helps thicken the cake.
- Granulated Sugar: You can use a sugar alternative if you would like.
- Cake Mix: Grab your favorite white or yellow cake mix.
How To Make Blueberry Cake In Instant Pot
Step One: In a large bowl, cake pan, or springform pan, small enough to fit in your instant pot, add the blueberries, 2 Tablespoons of melted butter, cinnamon, cornstarch, and sugar. Toss to coat the berries. Add just enough cake mix to cover all the berries. I used about 1 ½ cups.
Step Two: Cut the remaining 4 Tablespoons of butter into small pats and place them all over the top of the cake mix.
Step Three: Cover the top of the bowl tightly with aluminum foil. Make sure to cut off any excess foil.
Step Four: Add 1 cup of water to the bottom of the Instant Pot and place the instant pot trivet inside. Place the bowl on top of the trivet.
Step Five: Make sure the lid is sealed and set the Instant Pot on high pressure, with a cooking time of 13 minutes. Allow to natural pressure release for 5 minutes, then do a quick release.
Step Six: Remove the bowl from the pot and remove the aluminum foil and place under a broiler for 3-4 minutes or until the top is a nice golden brown.
Step Seven: Place the blueberry cake on a cooling rack, and allow cooling for 5 minutes then serve with vanilla ice cream.
How To Store Leftover Blueberry Cake
If you ever find yourself with leftover blueberry cake, don’t worry! You can easily store it in the fridge or freezer to enjoy later. Here are some tips for how to store your cake safely and keep it fresh.
- Let the cake cool to room temperature.
- Cover or transfer the cake to a medium bowl, (airtight container) and cover it with saran or plastic wrap.
- Setore in teh refrigeotr for 2-3 dasy.
- Reheat the blueberry cake in the microwave, for a couple of minutes before serving.

Should You Use The Cake Button On Your Pressure Cooker
When you press the cake button on your pressure cooker, a timer will automatically start. This is great for ensuring that your cake cooks for the right amount of time and doesn’t burn or overcook. However, it’s important to remember that there are other factors involved in cooking a cake, such as the type of pan you’re using.
If you try to use a big pan for a little cake, it may not cook evenly. Similarly, if you put your cake in too small of a pan, then it could end up being overcooked on the top and undercooked in the middle. The best way to ensure even cooking is to use the right size pan for your cake.
When it comes to the type of pan you use, metal pans tend to be better than glass ones. This is because they conduct heat more evenly and help your cake cook perfectly throughout. That being said, it’s important to check that your metal pan isn’t coated with nonstick spray, as this can make it harder for your cake to cook evenly. If you’re not sure if the pan is coated, then a good way to test it is by putting water in your pan and bringing it to pressure right away. Then, check that the surface of the water looks relatively consistent.
In addition to using the right type of pan and being wary of your timer, you should also take into account the position that your cake is in on the pressure cooker rack. If your cake is too close to the top of your pressure cooker, then it may overcook or become burned around the edges. On the other hand, if it’s too bunched up at the bottom, then it may not cook properly. This is especially true if your cake has a liquid filling or frosting, as the excess moisture could make it mushy on the bottom and burn on top.

Instructions
