Muffins in the morning are such an easy and delicious breakfast. Today, I made these Air-Fried Banana Blueberry Oat Muffins with a simple muffin mix.

Fresh ingredients such as banana and blueberry and a healthy oats option were added. This makes for a quick and delicious breakfast. My kids love these, and adding the oats makes for a filling breakfast. These muffins are so moist and delicious!

  • If you want to reduce the sugar in the recipe, you can substitute it with unsweetened apple sauce.
  • I have made these several times in various types of Air Fryers, including the Ninja Foodi, Instant Pot Vortex, Instant Pot Crisp Lid, and other Air Fryer Baskets and oven models. The recipe and time will be about the same.

If you have leftover muffins, let them cool to room temperature and then place them in an airtight container or resealable bag. They will stay at room temperature for about 3 to 4 days.

If you store the leftover muffins in the refrigerator for longer than a week, they will last about a week. You can reheat them in the air fryer or microwave before serving.

  • 1 package Martha White Blueberry Muffin Mix
  • 1 cup milk
  • 1 large banana
  • 1 cup oats, (+ additional for topping)
  • 1/2 cup blueberries, fresh or frozen blueberries
  • 1/4 cup granulated sugar

Instructions

  • In a large bowl, mix the oats, muffin mix nad one banana, then add in the granulated sugar.
  • Fold in the blueberries. Either spray your muffin tins with cooking spray or line the muffin pans with liners.
  • Spoon the batter into lined muffin tins, add some additional oats, if desired. Set the air fryer, and set the temperature to 320 degrees F, air fryer setting for 10-12 minutes.
