Description

Air Fryer Banana Blueberry Oatmeal Muffins are soft, hearty, and made with oats, ripe bananas, and juicy blueberries. An easy air fryer muffin recipe perfect for breakfast, snacks, or meal prep.

Ingredients 

  • 1 package Martha White Blueberry Muffin Mix
  • 1 cup milk
  • 1 large banana, mashed
  • 1 cup oats, (+ additional for topping)
  • 1/2 cup blueberries, fresh or frozen blueberries
  • 1/4 cup granulated sugar

Instructions

  • In a mixing bowl, combine the Martha White Blueberry Muffin Mix with the milk. Stir until just combined.
  • Add the mashed banana, oats, blueberries, and granulated sugar to the muffin mix. Mix until all ingredients are evenly incorporated.
  • Preheat your air fryer to 350°F (175°C) for a few minutes.
  • Line the air fryer basket with silicone muffin cups or paper liners.
  • Spoon the muffin batter into the prepared muffin cups, filling each about two-thirds full.
  • Sprinkle additional oats on top of each muffin for added texture, if desired.
  • Place the filled muffin cups in the preheated air fryer basket, leaving space between each muffin for air circulation.
  • Air fry the muffins at 350°F (175°C) for 12-15 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean.
  • Once cooked, carefully remove the muffins from the air fryer and allow them to cool slightly before serving.
