How To Make Air Fryer S’mores Cookies
Mix the flour, baking powder, baking soda, corn starch, and salt in a large bowl. In another bowl, mix the butter, sugar, and brown sugar, mix until fluffy, then add the eggs and pure vanilla extract.
Fold in the wet ingredients into the dry ingredients, mix well until smooth. Fold in the chocolate chips, marshmallows, diced chocolate bar, and crushed graham crackers. Mix well, and then refrigerate for about 30 minutes.
Line your air fryer basket with parchment paper, and then using a cookie scoop, add about two tablespoons of cookie batter on top. Set the temperature to 320 degrees F, air fryer setting, for 5 to 7 minutes. Remove when the edges start to brown.
PRO TIPS:
- Chill the Cookie Dough: Chilling cookie dough in the refrigerator ensures that your cookies have more time to chill before baking, keeping them from spreading too much. You will end up with a batch of thicker and sturdier treats with an enhanced flavor!
- Use parchment paper, line the entire bottom of the air fryer basket, and spray the liner with cooking spray. Make sure that the parchment paper is weighted down so it does not fly up in the air fryer heating element. This will become a fire hazard, so be careful.
- Room Temperature Ingredients: Cookies are best when butter and eggs are at room temperature.
- Let the cookies cool before removing them from the air fryer basket. You will notice that as these cookies cool down, they will harden.
What Marshmallows To Use:
You can use either mini marshmallows or larger mushrooms, diced. Either will work for this recipe.
Another option is to use 1/2 cup of marshmallow creme.
How To Store:
These cookies will last in an airtight container for 3 to 5 days, and they are best kept at room temperature since the refrigeration will cause the marshmallows to harden.
How To Freeze:
These are a great make-ahead treat, and you can either freeze them before baking up these cookies.
To freeze the dough: Shape your cookie dough and place it onto a greased baking sheet. Place the baking sheet into the freezer, and free until frozen solid. Remove and place the cookies into a freezer bag. When you cook them, use the directions in the recipe card below, and add a couple of minutes to the cooking time.
To freeze the cookies: Let them cool to room temperature and then place them into a freezer bag. Defrost at room temperature before consuming.
