  • All-Purpose Flour: The foundation of the donuts provides structure and a soft, cake-like texture that captures the essence of traditional donuts.
  • Baking Powder and Baking Soda: A crucial leavening agent that ensures your donuts rise beautifully, becoming airy and fluffy as they cook.
  • Salt: A pinch of salt enhances the overall flavor profile of the donuts, making the sweet and tangy notes more pronounced.
  • Egg: Binds the ingredients together, adding structure and richness to the donuts, ensuring they have a moist, delicate texture.
  • Granulated Sugar: Adds the necessary sweetness to the dough, balancing the tartness of the lemon and raspberry flavors.
  • Pure Vanilla Extract: For added flavor.
  • Milk: Moistens the batter, contributing to the donuts’ tender crumb. Any variety of milk, including non-dairy options, can be used.
  • Greek Yogurt (Plain): Moistens the donuts for fluffy donuts.
  • Vegetable Oil or Unsalted Butter: Adds depth and richness to the dough, enhancing the mouthfeel and flavor of the donuts.

Pro Tips

Creating the perfect batch of Air Fryer Raspberry Lemon Donuts can be an absolute delight with these pro tips, ensuring each donut turns out light, flavorful, and irresistibly delicious:

  • Use Fresh Ingredients: For the brightest flavor, use fresh raspberries and real lemons. The freshness of the fruit will significantly impact the final taste, giving your donuts a vibrant, natural flavor that can’t be replicated with artificial substitutes.
  • Strain Raspberry Puree: To ensure a smooth batter, strain your raspberry puree to remove seeds. This extra step will enhance the texture of your donuts, making them more enjoyable to eat.
  • Finely Grate Your Lemon Zest: Use the finest grater you have for the lemon zest to ensure it distributes evenly throughout the batter without creating any bitter chunks.
  • Don’t Overmix the Batter: Mix the batter just until the ingredients are combined. Overmixing can lead to tough donuts. A few lumps in the batter are perfectly fine and will not affect the final product.
  • Preheat Your Air Fryer: Although not all air fryer models require this step, preheating can help achieve a more consistent cooking temperature, leading to evenly cooked donuts.
  • Use Silicone Molds or Parchment Paper: If you don’t have donut molds, you can make your own donut shapes on parchment paper. This can help in easy removal and maintaining the shape of the donuts during the cooking process.
  • Monitor Cooking Time Closely: Air fryers can vary in their cooking efficiency. Start checking for doneness a minute or two before the recipe’s suggested time to avoid overcooking. The donuts should be lightly golden and spring back when lightly touched.
  • Glaze While Warm: Applying the glaze to warm donuts helps it set beautifully, creating a smooth, even coating. However, ensure the donuts aren’t too hot, or the glaze may run off too quickly.
  • Adjust Glaze to Taste: If you prefer a stronger lemon flavor in your glaze, add more lemon juice. For a thicker glaze, add more powdered sugar until you achieve the desired consistency.
  • Decorate with Flair: After glazing, garnish your donuts with a sprinkle of lemon zest or finely chopped fresh raspberries for an extra pop of color and flavor, enhancing their visual appeal and taste.

By following these tips, you’ll master the art of making Air Fryer Raspberry Lemon Donuts, creating a treat that’s as delightful to look at as it is to devour.

Air Fryer Raspberry Lemon Donuts

Faq’s

Can I use frozen raspberries instead of fresh? Yes, you can use frozen raspberries, but thaw and drain them well to remove excess moisture. This helps maintain the desired consistency of your batter and the intensity of the raspberry flavor.

How do I prevent the donuts from sticking to the air fryer basket? Use parchment paper with holes punched in it or lightly grease the basket with cooking spray. Some air fryers come with non-stick baskets, but a little precaution ensures your donuts come out cleanly.

Can I make these donuts gluten-free? To make these donuts gluten-free, substitute the all-purpose flour with a gluten-free flour blend designed for baking. Keep in mind that textures may vary slightly with different flour blends.

How long will these donuts last? These donuts are best enjoyed fresh, but they can be stored in an airtight container at room temperature for up to 2 days. You can also refrigerate them for up to 5 days, but they might lose some of their texture.

Can the donut batter be made ahead of time? It’s best to cook the donuts immediately after making the batter for the best texture and rise. However, you can prepare the dry and wet ingredients separately and combine them just before cooking.

How do I know when the donuts are done cooking? The donuts should be lightly golden and spring back when gently pressed. An inserted toothpick should come out clean. Since air fryers vary, start checking a couple of minutes before the suggested cooking time.

Can I double this recipe? Yes, you can easily double the recipe to make more donuts. However, avoid overcrowding the air fryer basket to ensure even cooking. Cook in batches if necessary.

Is there a substitute for the egg in this recipe? For an egg-free version, you can use a commercial egg replacer or a “flax egg” (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit until thickened).

Can I add other flavors to these donuts? Absolutely! Feel free to experiment with adding extracts like almond or orange to the batter, or incorporate other berries for a different twist.

How can I make the glaze thicker or thinner? Adjust the consistency of the glaze by adding more powdered sugar to thicken it or more lemon juice (or a little milk) to thin it out, achieving your desired glaze consistency.
