If you are looking for a great and easy meal, this is one of my favorites. The air fryer does a great job crisping up the Portobello Mushroom, and the Basil Mayonnaise sauce is amazing. The entire sandwich is awesome and relatively healthy!

Serve with Air Fryer Copycat Burger Onion Rings, Air Fryer Copycat McDonald’s French Fries, or with a side salad.

How To Make Air Fryer Portobello Mushroom Burger

Step One: Place the mushrooms into a Ziplock plastic bag or large bowl and set them aside. Whisk together the balsamic vinegar, olive oil, pesto, salt, and black pepper in a small mixing bowl. Pour into the bag, zip it, and toss the rooms in the marinade. Marinade for 30 minutes on the counter. Toss every few minutes to ensure the mushrooms are evenly coated in the marinade.

Step Two: Preheat the air fryer to 370 degrees F. Place the mushrooms, stem side down, into the basket, not touching. Set cook time for 7-9 minutes, until tender.

Step Three: While the mushroom burgers are air frying, prepare the sauce. Mix the mayonnaise and pesto in a small bowl. Place the mayonnaise on the bottom bun, top with the cooked portobello mushroom, and then add a slice of tomato and a few basil leaves.

Ingredients 

  • 4 large  portobello , cleaned and stem removed
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon pesto
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Sauce:

  • 1/4 cup mayo
  • 1 tablespoon pesto

Serving:

  • 4 large brioche buns
  • 4 large sliced tomatoes
  • 4 large basil leaves

Instructions

  • Place the mushrooms into a plastic bag, set them aside.

  • Air fry for 7 minutes, until mushrooms are tender. You may need to do this in batches.
  • While the mushroom burgers are air frying, prepare the sauce. Mix the mayonnaise and pesto in a small bowl.
  • To Plate: Place the mayonnaise on the bottom bun, top with the cooked portobello mushroom, and then add a slice of tomato and a few leaves of basil.
