How To Make Air Fryer Mini Lemon Tarts

Note: These are the shells that I used for this recipe. (Found in the frozen food aisle at your local US Grocery Store)

Step One: Add the lemon pie filling to the top of the phyllo shell.
Step Two: Place the filled phyllo cups in your air fryer basket or on your air fryer tray. Set the air fryer temperature to 250 degrees F, air fryer setting, set cook time 3-5 minutes.
Step Three: Then let cool for a few minutes, then spray the whipped cream on top.

Air Fryer Mini Lemon Tarts Recipe Tips
- You Must: For best results, you will need to add the filling before adding them to the Air Fryer. Otherwise, they’ll end up in the heating element in the air fryer!
- Use sturdy phyllo shells: Look for pre-baked mini phyllo cups so they hold the filling and crisp nicely in the air fryer.
- Don’t overfill: Leave a little space at the top to prevent the lemon filling from spilling over while cooking.
- Low and slow: Air fry at a lower temperature (around 250°F) to gently warm the tarts without melting the whipped cream or cracking the shells.
- Chill the filling first: If using homemade lemon filling, refrigerate it before filling the shells to help the tarts hold their shape.
- Add toppings last: Whipped cream, zest, or a small fruit garnish should be added after air frying for the best presentation.
Storing Instructions
Store the tarts in an airtight container in the refrigerator for up to 3–4 days. Add whipped cream or fresh garnishes just before serving to keep them fresh and prevent sogginess.

Air Fryer Mini Lemon Tarts Recipe Faqs
Can I make these tarts ahead of time? Yes! You can prepare the lemon filling and phyllo shells in advance, but fill the shells just before air frying for best results.
Can I use homemade phyllo shells instead of store-bought? Absolutely! Just make sure they’re sturdy enough to hold the filling and will crisp up in the air fryer.
How do I prevent the whipped cream from melting? Add whipped cream after air frying and just before serving. Keep the tarts chilled until ready to serve.
Can I freeze these tarts? It’s best to freeze the lemon filling separately. Assemble and air fry fresh for optimal texture.
What temperature and time work best for air frying? Set your air fryer to 250°F and cook for 3–5 minutes—just enough to warm the tarts without overcooking.

Have you ever attempted to make a gluten-free version of these?
Thanks!
Laurie
Yes, and no. I made a batch, using pre-made gluten-free pie dough, and then used a egg wash to keep them moist, since G/F dough tends to dry out more. If you want to make this recipe G/F, use an egg wash, or brush with oil, during the cooking process, to keep the dough moist.
