Air Fryer Lemon Blueberry Bread is an amazing and delicious way to start your morning. It’s light, it’s fluffy, and it’s absolutely delicious.

Today, I made this while the family was busy reading the paper and playing games on the computer. It’s a great way to start any morning.

How To Make Air Fryer Lemon Blueberry Bread

Step One: In a large mixing bowl, cream the butter and sugar together. Add the eggs and milk to the creamed sugar/butter. Mix in the flour, baking powder, salt, lemon juice, mixes well. Fold in the blueberries.

Step Two: Pour the batter into a greased air fryer-safe pan. Set the pan into the air fryer, and set the air fryer temperature to 320 degrees F and set cook time for for 20-25 minutes.

Air Fryer Lemon Blueberry Bread Recipe Faqs
Why is my bread burning on top but raw in the middle? This is common in air fryers. Lower the temperature slightly (e.g., from 350°F to 325°F) and increase the cooking time. If the top still browns too quickly, loosely tent the bread with aluminum foil for the last half of the baking time.
Should I use fresh or frozen blueberries? You can use either! If using frozen blueberries, do not thaw them first. Gently toss the frozen berries with 1 tablespoon of flour before adding them to the batter; this prevents them from sinking to the bottom.
What size pan fits in my air fryer? Pan sizes vary widely depending on your air fryer model. Generally, a small 6×3 inch or 7 x3 inch loaf pan works for basket-style models, but always measure your basket/tray before starting.

- 1 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons lemon juice
- 1 1/2 cup blueberries, fresh
Instructions
- In a large mixing bowl, cream the 1/2 cup butter and 3/4 cup sugar together.
- Add the 2 large eggs and 1/2 cup milk to the creamed sugar/butter.
- Mix in the 1 1/2 cup all-purpose flour, 1 teaspoon baking powder,1/2 teaspoon salt, and 2 tablespoons lemon juice, and mix well.
- Fold in the 1 1/2 cup blueberries.
- Pour the batter into a greased air fryer-safe pan.

My stove’s oven has a Convection setting, which I believe works like an airfryer. Would I use the same temperature & time? Also, if using one loaf pan, what size should I use and how long to bake? Thank you!

I would reduce the temperature to about 300 degrees F, but it will take longer. So, check frequently. You can use either a regular size loaf pan or a mini loaf pan.
