Easy Ina Garten’s Pound Cake Recipe Tips

  • Room temperature ingredients: Make sure your butter, eggs, and sour cream are at room temperature for smoother mixing and a more even texture.
  • Don’t overmix: Mix the batter just until combined to avoid a dense cake.
  • Grease and flour the pan: Properly prepare your Bundt or loaf pan to ensure the cake releases easily.
  • Check doneness: Insert a toothpick in the center; it should come out clean or with just a few crumbs.
  • Cool before slicing: Let the cake cool completely in the pan for about 15–20 minutes, then transfer to a wire rack for full cooling to prevent breaking.
  • Optional glaze: Drizzle a simple vanilla or lemon glaze over the cooled cake for extra flavor and presentation.

Storing Instructions

  • Room temperature: Wrap the cooled pound cake tightly in plastic wrap or store in an airtight container. It will stay fresh for up to 3 days.
  • Refrigerator: For longer storage, wrap the cake tightly and refrigerate for up to 1 week. Let it come to room temperature before serving for best texture.
  • Freezing: Wrap the cake in plastic wrap and then in aluminum foil. Freeze for up to 3 months. Thaw overnight in the refrigerator or for a few hours at room temperature.

Easy Ina Garten’s Pound Cake Recipe Faqs

Why is creaming the butter and sugar so important? This step incorporates air into the batter, which is essential because traditional pound cakes rely on this air, rather than leavening agents like baking soda, to give the cake its lift and tender crumb.

How do I know if my pound cake is fully baked? The cake is done when a wooden skewer or toothpick inserted into the center comes out clean. The top should be deeply golden, and the cake should begin to pull away slightly from the sides of the pan.

Can I use a different pan size? Yes, but you must adjust the baking time. If using two smaller loaf pans or a Bundt pan, decrease the time. If using a larger pan, increase the time, and always monitor it closely with a skewer test.

Why is my pound cake dry or dense? Usually, this is caused by over-mixing the batter once the flour is added (which develops tough gluten) or over-baking. Follow the recipe’s timing, and stop mixing as soon as the dry ingredients are just combined.

Should the ingredients be at room temperature? Yes, absolutely. Room temperature butter, eggs, and dairy cream together smoothly to form a stable emulsion, leading to a much higher volume and finer, more uniform crumb structure in the finished cake.
