Air Fryer Blueberry Pie Bars is a great family-friendly dessert that bakes up so quickly and deliciously in the Air Fryer!

There is nothing better for a quick dessert, lunch box snack, or dessert than this delicious butter shortbread, topped with an easy blueberry pie filling! They are so good!

If you have not baked in the Air Fryer yet, this is a great recipe to start with, and you can use this recipe with any air fryer you own, from the Ninja Food, Instant Pot Vortex, Instant Pot Crisp Lid, and even the Mealthy Lid, this recipe will work in all of them!

  • Butter
  • Granulated Sugar
  • Eggs
  • Pure Vanilla Extract
  • All-Purpose Flour
  • Baking Powder
  • Blueberry Pie Filling

How To Make Air Fryer Blueberry Pie Bars

Cream Butter and Sugar in Bowl

In a large mixing bowl, cream the butter and sugar together—then mix in the eggs.

Dough in Bowl

Then add the vanilla, flour, baking powder and mix well. Mix until everything is well blended.

Spread Dough into Pan

Spray an air fryer-safe pan (if it’s oven safe, it’s generally air fryer safe) with olive oil spray. Choose a pan that is not too thick. Otherwise, you will have a hard time with the bottom cooking.

Blueberry-Pie-Bars

Use about 3/4’s of the dough for the bottom layer, spread it out. So, you get a thin crust. Spread the blueberry pie filling over the top. Scatter the dough over the pie,

Set in the air fryer oven or basket, set the time for 10 minutes at 320 degrees F, and then set the temperature to 300 degrees F for another 10 minutes.

Let cool before slicing into bars.

Pro Tips:

  • This recipe will work the same whether you have the Ninja Foodi, Instant Pot Vortex, GoWise, or any other Air Fryer Basket or Oven Model. The key would be to check on the Air Fryer Blueberry Pie Bars frequently during the cooking time since each air fryer bakes a bit differently.
  • This recipe will work with any canned pie filling, whether peach, blackberry, apple, cherry, etc. The directions and recipe will remain the same.
  • Use a skinny pan. Otherwise, your Air Fryer Blueberry Pie Bars will not fully cook on the bottom. If you find that you have difficulty with the bottom cooking fully, blind bake them first and then add the pie filling on top!

Can I Use Frozen Blueberries?

Yes, but for best results, do not defrost them before you add them. Otherwise, they will make your shortbread crust soggy.

Can I Freeze Blueberry Bars?

Yes, this is a great make-ahead dessert. Let them cool to room temperature, and then wrap them individually in plastic wrap. Then freeze them. They will last about 1 to 2 months.

To use, place them into the refrigerator overnight.

Description

Today, I reached for one of my mother’s favorite recipes and adapted it for the air fryer with the kids' home. It’s a great dessert, and I usually bring it to holiday parties and get-togethers. It is really kid-friendly and a great snack to share.

Ingredients 

  • 1/2 cup butter, room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cup flour, all-purpose
  • 1 teaspoon baking powder
  • 21 ounces blueberry pie filling

Instructions

  • In a large mixing bowl, cream the butter and sugar together.
  • The mix in the eggs.
  • Then add the vanilla, flour, baking powder and mix well.
  • Mix until everything is well blended.
