I will be the first one to tell you before the Tik Tok explosion of Corn Ribs, I have never heard of them.

For the most part, Corn’s ribs are whole corn on the cob that has been cut in half and then cut in half again. They are usually deep-fried, but today we air-fried a batch.

Each ear of corn will give you four pieces.

  • 1/2 cup mayonnaise
  • 2 tablespoons chipotle peppers, in ancho sauce, finely chopped
  • 1 tablespoon lime juice
  • 1/2 cup cotija cheese
  • 1/4 cup cilantro, diced
