Description

Crispy Air Fryer Elote Avocado Toast with smoky corn, creamy avocado, cotija cheese, and zesty lime. Perfect for breakfast, brunch, or a quick, flavorful snack.

Ingredients 

  • 2 teaspoons butter
  • 1 ½ cups fresh corn kernels
  • 1 small serrano, thinly sliced
  • ½ tablespoon fresh lime juice
  • 1 tablespoon minced fresh cilantro
  • 1 tablespoon Greek yogurt
  • ¼ teaspoon Kosher salt
  • Pinch fresh cracked pepper
  • 2 slices bread, any type depending on dietary preference
  • ½ avocado, mashed
  • 2 tablespoons cotija cheese, crumbled
  • 2 tablespoons pickled red onions
  • ½ teaspoon chili powder

Instructions

  • In a medium-sized skillet, over high heat, heat the 2 teaspoons butter.. Then add the 1 ½ cups fresh corn kernels, and cook for about 2 to 3 minutes without stirring.
  • Stir in the 1 small serrano, ½ tablespoon fresh lime juice, 1 tablespoon minced fresh cilantro, and 1 tablespoon Greek yogurt. Seasons with ¼ teaspoon Kosher salt and Pinch fresh cracked pepper to taste.
  • Place your 2 slices bread into the air fryer basket, and set the air fryer temperature to 400 degrees F, air fryer setting, and set cook time for 2-4 minutes.
  • Use a fork to mash the ½ avocado onto the toast, top with the corn mixture, 2 tablespoons cotija cheese, 2 tablespoons pickled red onions, and ½ teaspoon chili powder.
