These air fryer apple turnovers are golden, flaky, and bursting with warm cinnamon-spiced apples — and they come together in under 20 minutes. Made with store-bought puff pastry and a quick homemade apple filling, they taste like they came from a bakery but take a fraction of the effort.

Perfect for fall mornings, cozy brunches, or a fast holiday dessert, this is one of those recipes the whole family asks for on repeat.
Tip: Want it even faster? Skip the homemade filling and use canned apple pie filling — see the shortcut version below.

Why You’ll Love This Recipe
- Quick and easy — ready in under 20 minutes with just a few ingredients.
- Flaky and golden — puff pastry crisps up beautifully in the air fryer.
- Sweet cinnamon apple filling — warm, comforting, and not too sweet.
- Less oil, less mess — the air fryer does all the work, no deep frying.
- Flexible — make them with fresh apples or canned filling, fresh or frozen.
Ingredients You’ll Need

- Puff pastry sheets — thawed; buttery and flaky, the shortcut to bakery results.
- Apples — peeled, cored, and diced (see best varieties below).
- Brown sugar — adds warm, caramel-like sweetness.
- Ground cinnamon and nutmeg — classic apple-pie spices.
- Lemon juice — brightens the filling and keeps apples from browning.
- Cornstarch — thickens the juices so the filling doesn’t leak.
- Egg — beaten, for a glossy golden egg wash.
- Powdered sugar and milk — whisked into a simple vanilla glaze (optional).
Best Apples for Apple Turnovers
For the best texture and flavor, use a firm, slightly tart apple that holds its shape when cooked:
- Granny Smith — tart and firm, the classic choice.
- Honeycrisp — sweet-tart with great structure.
- Braeburn or Fuji — sweeter, if you prefer less tang.
Avoid soft varieties like Red Delicious, which turn mushy.
How to Make Air Fryer Apple Turnovers

Step 1 — Make the filling. In a bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir until the apples are evenly coated and let sit a few minutes so the cornstarch begins to thicken the juices.

Step 2 — Cut the pastry. On a lightly floured surface, unfold the thawed puff pastry and roll it out slightly to even it. Cut into four equal squares using a sharp knife or pizza cutter.

Step 3 — Fill and fold. Spoon the apple mixture onto one half of each square, leaving a small border. Fold into a triangle, press the edges together, then crimp with a fork to seal tightly.

Step 4 — Egg wash. Lightly beat the egg and brush it over the tops. Sprinkle with a little granulated or sparkling sugar for crunch.
Step 5 — Air fry. Preheat the air fryer to 350°F (175°C). Place turnovers in a single layer, not touching, and cook 10–12 minutes until golden brown and puffed. Work in batches if needed.

Step 6 — Glaze and serve. Let cool 5 minutes on a wire rack. Whisk the powdered sugar with a splash of milk and drizzle over the top. Serve warm.

Shortcut: Air Fryer Canned Apple Pie Filling Turnovers
Short on time? Skip the chopping and use canned apple pie filling. Spoon it onto the pastry squares (leaving a border), fold, seal, and air fry exactly as above. For extra flavor, sprinkle a little cinnamon on top before cooking, or finish with the vanilla glaze once cooled. This version is perfect for busy mornings or last-minute desserts.
Expert Tips
- Preheat the air fryer for even cooking and a crisp, golden crust.
- Keep the pastry cold — cold pastry puffs higher and flakier.
- Don’t overfill — too much filling causes leaks and soggy bottoms.
- Seal well — crimp the edges firmly with a fork.
- Don’t overcrowd — leave space so hot air circulates.
- Check early — air fryer models vary; start checking at 10 minutes.
How to Store and Reheat
- Store leftover turnovers in an airtight container at room temperature for up to 2 days. Avoid the fridge, which softens the pastry.
- Reheat in the air fryer at 325°F for 3–5 minutes to crisp them back up, or in a 350°F oven for 5–7 minutes.
Make-Ahead and Freezer Instructions
- Make ahead: Assemble the turnovers, cover, and refrigerate up to 24 hours before cooking.
- Freeze unbaked: Freeze assembled turnovers on a tray, then transfer to a freezer bag for up to 2 months. Air fry straight from frozen at 350°F for 14–16 minutes.
- Freeze baked: Cool completely, freeze, and reheat in the air fryer at 325°F until warm and crisp.

Frequently Asked Questions
Can I use frozen apples? Yes — thaw and drain them well first so excess liquid doesn’t make the turnovers soggy.
Can I bake these in the oven instead? Absolutely. Bake at 400°F (200°C) for 15–20 minutes until golden and puffed.
Can I make the turnovers ahead of time? Yes. Assemble and refrigerate or freeze, then cook straight from the fridge or freezer when ready.
Do I have to use egg wash? No, but it gives a shiny, golden, bakery-style finish. For an egg-free option, brush with a little milk or melted butter.
Can I swap the apples for other fruit? Yes — try cherry, blueberry, or mixed-berry filling for a fun variation.
How do I keep the filling from leaking? Leave a border around the filling, don’t overfill, and crimp the edges firmly with a fork.
How long do they stay fresh? Up to 2 days at room temperature in an airtight container. Reheat in the air fryer for the best texture.

Three hours ago I was craving sweets and then your recipe for apple turnovers arrived in my email. I had to read the recipe twice because I could not believe how easy it looked and how little amount of ingredients were needed. Off to the store and cooked them as written in the Ninja Foodi Smartlid and crisped the exterior in 3 mins at 395 degrees. This certainly fulfilled my cravings and your recipe sure beats rolling out dough and all. Next store trip will be loading up on the ingredients as I know this is going to be a weekly batch. Thank you, Laurie, they’re delish.
