Apple cider carries plenty of natural sugar, so it clears the Slushi’s minimum without any help, which makes this one of the more forgiving drinks you can run. Five minutes of prep, then the machine does the rest and holds it cold for hours.

One thing to get right before you start: use caramel syrup in the vessel and thick caramel sauce in the glass. They are not interchangeable. More on that below, because it’s the difference between a smooth slush and a machine you’ll be scraping out.

  • Chilled apple cider: The base and the sugar source. Cider tastes more like apple and looks cloudier; apple juice is cleaner and freezes marginally smoother. Either works. Chill it first — room-temperature liquid adds fifteen minutes to the run time.
  • Caramel syrup: The thin, pourable kind sold for coffee — not the thick sauce sold for ice cream. Thick caramel doesn’t disperse in cold liquid. It sinks, coats the auger, and makes cleanup miserable. Substitution: butterscotch syrup, or salted caramel syrup if you want the salt built in.
  • Fresh lemon juice: Keeps the apple from reading as generically sweet. Small addition, noticeable difference.
  • Salt: Turns caramel into salted caramel and sharpens the apple.
  • For serving — thick caramel sauce and cinnamon sugar: This is where the good stuff belongs. Drizzle the inside of the glass and dip the rim.

Why the cinnamon goes on the rim

Ground cinnamon doesn’t dissolve. Add it to the vessel and it separates out, settles, and leaves grit in the bottom of every glass. If you want cinnamon in the drink itself, use cinnamon syrup. Otherwise it belongs in the rim sugar, where you taste it on every sip instead of hunting for it.

How to Make Caramel Apple Cider Slush

Step One: Whisk the caramel syrup, lemon juice, and salt into about 1 cup of the cider until fully combined. Doing this in a pitcher first means the syrup actually disperses instead of pooling at the bottom of the vessel.

Step Two: Add the remaining cider and stir. Taste it — it should be a touch sweeter than you’d want at room temperature. Cold mutes sweetness, and a base that tastes balanced warm tastes thin frozen.

Step Three: Pour into the Slushi vessel, staying between the minimum and maximum fill lines.

Step Four: Select SLUSH and press start. Expect 20 to 30 minutes with chilled cider, longer if it went in warm. The unit beeps three times when it’s ready.

Step Five: While it runs, prep the glasses. Drizzle thick caramel down the inside of each one, then dip the rims in cinnamon sugar.

Step Six: Dispense, top with whipped cream and another caramel drizzle, and serve.

Tips

  • Chill the cider first. The single biggest factor in run time.
  • Thicker or thinner? Press the temperature arrow up for a denser slush, down for something sippable through a straw.
  • No apple chunks. There are no blades in this machine. Solids jam the auger.
  • It holds for hours. Non-alcoholic slush stays at temperature up to 12 hours without diluting, so you can start it before guests arrive.
  • Rinse immediately. Caramel that dries in the auger is the worst version of this cleanup. Stop the preset, press RINSE, fill with hot water, dispense straight away.

Variations

  • Spiked caramel apple — replace 1 cup of the cider with bourbon, spiced rum, or cinnamon whiskey and switch to SPIKED SLUSH. Keep the finished mix under 16% ABV or it won’t freeze.
  • Caramel apple milkshake — swap 1 cup of cider for heavy cream and run MILKSHAKE. Dispense within 30 minutes or it turns foamy.
  • Fizzy version — stir a splash of ginger ale into the glass after dispensing, not into the vessel. Carbonation foams badly in the machine.
  • Salted caramel — double the salt and use salted caramel syrup.
  • Green apple — use green apple juice for something sharper and more photogenic.
  • Caramel apple float — dispense over a scoop of vanilla ice cream.

Frequently Asked Questions

Can I use thick caramel sauce in the machine? Don’t. It doesn’t disperse in cold liquid, it coats the auger, and cleanup gets significantly harder. Pourable syrup goes in the drink; sauce goes in the glass.

Apple cider or apple juice? Cider has more apple flavor and a cloudier look. Juice freezes slightly smoother. Both clear the machine’s sugar minimum easily.

Which preset should I use? SLUSH as written. SPIKED SLUSH if you add alcohol, MILKSHAKE if you add cream.

Can I add cinnamon to the drink itself? Only as cinnamon syrup. Ground cinnamon separates and settles out.

Can I make this sugar-free? It’s difficult. The cider’s natural sugar is doing structural work, and sugar-free apple drinks fall below the machine’s 4% minimum and won’t freeze.

How long does it take? Twenty to thirty minutes with chilled cider. Up to an hour if it starts at room temperature.
