Ingredients Needed For Air Fryer Grilled Zucchini
- Zucchini– Fresh zucchini is best for this recipe. If you want, you can throw in some yellow squash as well!
- Olive Oil
- Lemon Zest– Freshly zested lemon makes the flavor of the zucchini really stand out!
- Salt and Black Pepper– Season with salt & pepper to taste. Add some extra seasonings like garlic powder, thyme or rosemary as well if you would like.
How To Make Air Fryer Grilled Zucchini
- Start by cutting your zucchini into 1/4 to 1/3 -inch slices.
- In a small bowl, toss the zucchini with olive oil, lemon zest, salt, and pepper, making sure to coat the zucchini.
- Then place them in the air fryer tray or basket.
- Set the temperature to 350 degrees F, air fryer setting, for 7-12 minutes, flipping halfway through.
- Season with salt & black pepper before serving and enjoy!
Pro Tips
- When cutting your zucchini, make sure to cut the pieces into uniform sizes. You can make your slices bigger and cook them for a longer period of time, just make sure they are all about the same size!
- Season your zucchini according to your taste or the meal that you are pairing it with. Some of my go-to’s are garlic & onion powder, thyme, rosemary, and parsley. Top with some parmesan cheese for extra flavor as well!
- Add sauce! Try to drizzle some balsamic vinegar, pesto sauce, or even ranch over your grilled zucchini for extra flavor.
- Don’t overcook your zucchini! Unfortunately, zucchini can become mushy if you cook it too long. You want the zucchini to be tender, but still with a little bite to it.

The truth is that you can cut your zucchini any way as long as it fits in your air fryer. Whether you cut it diagonally or horizontally, it will air-fry up perfectly. Keep in mind that the thickness of the zucchini cuts will ultimately determine the cooking time for the zucchini, so adjust accordingly.
To store, place zucchini in an air-tight container in the fridge for up to 3 days before it gets too soggy to eat. To reheat, add the refrigerated zucchini back to the air fryer basket and air fry at 350 degrees F until warmed through.
