Bob Evan’s Mushroom and Onion Chopped Steak Recipe Tips

  • Avoid overhandling the beef: When molding your patties, mix the ground beef gently to ensure that it remains tender and juicy.
  • Cook to temperature: For food safety (and the right texture), aim for an internal temperature of 160°F.
  • Caramelize slowly: You want to cook the onions and mushrooms low and slow so they release their natural sweetness.
  • Thicken the gravy as desired: A rapid cornstarch slurry (cornstarch + water) for a thick, restaurant-style sauce.
  • Serve it with the usual sides: Mashed potatoes, rice or buttered vegetables and this is a wonderful hearty second course.

Storing, Freezing & Reheating Instructions

  • Storage: Chopped steak with mushroom and onion gravy will keep in an airtight container in the fridge for 3–4 days.
  • Freeze: I would highly recommend freezing these patties separately from the gravy. Wrap each patty in plastic wrap and place into a freezer bag or container. Store the gravy in a separate air-tight container and freeze it. Both will last for 2 months.
  • Reheating: If frozen, thaw overnight in the fridge. Reheat patties in the air fryer at 350°F for 45 minutes until warmed. Heat the gravy over medium-low heat on the stovetop, stirring occasionally and adding a splash of broth or water if it’s too thick. Pour over patties before serving.

Can I substitute other meats in place of beef? Absolutely! You can totally make this with ground turkey or chicken, or even meatless alternatives — you might just need to tweak the cook time a bit.

How can I thicken the gravy? (If you want a thicker gravy, whisk a cornstarch slurry — 1 tablespoon of cornstarch with 2 tablespoons of water — into the sauce and simmer until thickened to your liking.)

What goes good sides with chopped steak? Serve with mashed potatoes, rice or egg noodles or roasted vegetables to make a comforting meal!

Can this be made ahead? You can, actually How to make them You’ll also find the patties easier to prepare if you cook the onion-mushroom gravy in advance. The mixture can be stored, covered and kept in the refrigerator, then reheated before combining.
