How To Make Bob Evan’s Mushroom and Onion Chopped Steak Recipe

Step One: Season ground beef patties with salt and pepper. Lightly spray or brush with oil.

Step Two: Preheat the air fryer to 370 degrees F. Place patties in a single layer in the basket. Set cook time for 10–12 minutes, flipping halfway through, until browned and cooked to 160°F internally.

Step Three: In a skillet on the stovetop (or oven-safe dish in the air fryer), sauté onions and mushrooms with a little olive oil until tender and caramelized.
Step Four: Add beef broth and a splash of Worcestershire to the onions and mushrooms. Simmer for a few minutes; thicken with cornstarch slurry if desired. Pour the onion and mushroom gravy over the air-fried chopped steaks. Serve hot with mashed potatoes, rice, or veggies.

Bob Evan’s Mushroom and Onion Chopped Steak Recipe Tips
- Avoid overhandling the beef: When molding your patties, mix the ground beef gently to ensure that it remains tender and juicy.
- Cook to temperature: For food safety (and the right texture), aim for an internal temperature of 160°F.
- Caramelize slowly: You want to cook the onions and mushrooms low and slow so they release their natural sweetness.
- Thicken the gravy as desired: A rapid cornstarch slurry (cornstarch + water) for a thick, restaurant-style sauce.
- Serve it with the usual sides: Mashed potatoes, rice or buttered vegetables and this is a wonderful hearty second course.
Storing, Freezing & Reheating Instructions
- Storage: Chopped steak with mushroom and onion gravy will keep in an airtight container in the fridge for 3–4 days.
- Freeze: I would highly recommend freezing these patties separately from the gravy. Wrap each patty in plastic wrap and place into a freezer bag or container. Store the gravy in a separate air-tight container and freeze it. Both will last for 2 months.
- Reheating: If frozen, thaw overnight in the fridge. Reheat patties in the air fryer at 350°F for 45 minutes until warmed. Heat the gravy over medium-low heat on the stovetop, stirring occasionally and adding a splash of broth or water if it’s too thick. Pour over patties before serving.
