What Is Tempeh?

Tempeh is a plant-based ingredient made from fermented soybeans, shaped into a dense block. Originating from Indonesia, tempeh has a firm texture, nutty flavor, and is packed with protein, fiber and essential nutrients.

Unlike tofu, which is softer and more neutral in flavor, tempeh holds its shape well and has a slightly earthy, savory taste. It also has a much denser texture and quite a bit of a bite to it. 

Tempeh is very versatile, and can be made with many different spices or marinades. It’s ideal for vegetarian and vegan cooking, but it’s also a fantastic ingredient for everyone!

  • Tempeh – For this recipe you need and 8 oz plain or smoky block of tempeh.
  • Soy sauce or tamari – Adds a savory, umami-rich base. Tamari is a great gluten-free alternative to soy sauce. 
  • Maple syrup – Optional, but adds a hint of sweetness to balance the savory flavors. You can also use sugar or honey instead. 
  • Smoked paprika and garlic powder – Give the tempeh a smoky, bold flavor profile. Feel free to use any other spices you like. 
  • Ground ginger – Optional, but adds a subtle warmth and depth to the marinade. You can also use grated garlic for more flavor. 

How to Make Air Fryer Tempeh

Step One: Slice the tempeh into 1/2-inch strips or cubes. For a softer texture, steam the tempeh for 5-10 minutes before marinating (optional).

Step Two: In a bowl, whisk together olive oil, soy sauce, maple syrup, garlic powder, smoked paprika, ground ginger, salt, and pepper. Add the tempeh to the marinade and toss until evenly coated. Let it sit for 10-15 minutes (or up to 30 minutes) to absorb the flavors.
