Following the manufacturer’s instructions, pre-heat your air fryer to 350 degrees F, air fryer setting. Prepare a few pieces of parchment paper to fit your air fryer basket or tray, and set them aside. When the air fryer is preheated, spray with cooking spray.
A hand-held electric mixer or a stand mixer beat butter and shortening until creamy and well-combined for at least 30 seconds.
Then add the sugar, baking soda, cream to tartar, and salt, continue to beat, ensuring you scrape down the side, so the bowl is as necessary. Add the egg yolks and vanilla.
Add the flour, ensuring you’re still scraping down the sides of the mixing bowl once the flour has been well incorporated into the dough mixture, shape dough into 2-inch balls, and flatten to 1/2 inch thickness.
