How To Make Air Fryer Shortbread Cookies

Following the manufacturer’s instructions, pre-heat your air fryer to 350 degrees F, air fryer setting. Prepare a few pieces of parchment paper to fit your air fryer basket or tray, and set them aside. When the air fryer is preheated, spray with cooking spray.

A hand-held electric mixer or a stand mixer beat butter and shortening until creamy and well-combined for at least 30 seconds.

Then add the sugar, baking soda, cream to tartar, and salt, continue to beat, ensuring you scrape down the side, so the bowl is as necessary. Add the egg yolks and vanilla.

Add the flour, ensuring you’re still scraping down the sides of the mixing bowl once the flour has been well incorporated into the dough mixture, shape dough into 2-inch balls, and flatten to 1/2 inch thickness.

Place each flatted piece of dough onto the parchment paper in the air fryer basket, about 1/2 to 3/4 inches apart—Cook for 6 minutes, or until the cookies turn a deep golden brown.

PRO TIPS FOR MAKING SHORTBREAD COOKIES

  • You can make the cookie dough well in advance. It keeps for about a week when refrigerated and upwards of three months if frozen! Make sure you wrap it very tightly before storing as cold temperatures will cause the butter to stiffen up, making cutting your cookies much more complicated than it should be – but don’t fret because just thawing out some is all that’s needed to save this delicious treat for another day 🙂
  • If your butter isn’t room temp just cut the sticks into a few slices and microwave on 50% power for about five seconds.
  • A great add-in is toasted peanuts or nuts.
  • Don’t overmix or work the batter. Otherwise, you will end up with dry shortbread cookies. Stop mixing once the ingredients are combined and a dough forms.
  • Remove the tray or basket from the Air Fryer, remove the cookies with a metal spatula, and put the cookies on a wire cooling rack.
  • Remove used parchment paper and replace it with a fresh sheet. Spray the parchment paper with cooking spray, and repeat until you have used all of the dough up.
  • Sprinkle cookie tops with coarse sugar if desired.
  • Some air fryers require reheating/pre-heating after each cooking cycle. Check your air fryer. I always do one batch of cookies and see if I need to pre-heat.
  • If you need to pre-heat, one top to speed along the process, prepare each baking sheet before it goes into the air fryer by spraying the cooking spray and placing the cookies on it so that once the batch is finished cooking, the next batch will be ready to go into the air fryer.

How Can You Tell If The Shortbread Is Baked Through?

When making shortbread, it can be challenging to know when the dough is cooked through. Shortbread is generally done when the edges start to turn a golden brown. When they go from golden brown to dark brown, they are typically overcooked. You are looking for a golden brown color on the edges.
