Air Fryer, Roasted Asparagus & New Potatoes

This is such a simple side dish, made with the help of the air fryer. And I absolutely love roasted asparagus in the air fryer. The dill really brings out the flavors.




  1. Start by cutting your potatoes and then put them in a small saucepan, cover them with water and simmer until fork-tender. Then drain.
  2. Chop your asparagus into about 2-inch pieces. (Cut the ends off, and discard) Chop the whites of the scallions into about 1/2 inch pieces.
  3. Add the asparagus and scallions to a small mixing bowl, and then add the olive oil, and coat them. Place them in the air fryer for 5 minutes at 350 degrees F (air fryer setting)
  4. In a large mixing bowl, add the drained potatoes, roasted asparagus and scallions, mix in 2 tablespoons of olive oil, dill spice, salt, and pepper. Mix well.
  5. Plate, serve and enjoy!
