Peruvian Lomo Saltado is a dish that originated in Peru and consisted of meat, onions, tomatoes, peppers, and french fries. It is typically served with white rice. This is a trendy dish in Peru and is often eaten for breakfast or lunch. The name means “sautéed beef.”
Peruvian Lomo Saltado can be found at most restaurants throughout the country and many Peruvian restaurants here in the United States.

Ingredients Needed For Air Fryer Peruvian Lomo Saltado
- Sirloin Steak
- French Fries
- Red Onions
- Tomatoes
- Minced Garlic
- Soy Sauce
- White Vinegar
- Cilantro
- Basmati Rice
- Salt
- Black Pepper
- Olive Oil
- Water
How To Make Air Fryer Peruvian Lomo Saltado
Start by washing and cooking your basmati rice. Add 2 cups of water to a pot, bring to a boil, add your washed rice, and bring the heat down to low. Cover with a lid and cook for about 16 minutes.
Add your Frozen Fries To your air fryer and cook for 14-16 minutes on 400 degrees F, air fryer setting.
In a small bowl, add the sliced sirloin steak, olive oil, soy sauce, vinegar, salt, and pepper, transfer to the air fryer basket, and cook until browned for about 5-7 minutes, at 350 degrees F, air fryer setting. When the steak is almost cooked, add your onion and garlic, cook, until fragrant and browned, and add your sliced tomatoes and red onion. Air Fry for another 2 minutes. Make you’re your tomatoes don’t get too soft. It needs to keep its texture.
Serve the beef on a bed of rice and fries. Enjoy!
What kind of beef cuts can I use for this recipe?
There are several different cuts of meat you can use for this recipe. My favorite Peruvian restaurant near me uses filet mignon, but today, I used a simple sirloin steak, but skirt would also be delicious!
The thing to keep in mind when cutting up your meats is that they need to have an even thickness, so they cook at the same rate throughout cooking time – don’t go too thick on one side and thin out towards the other edge; otherwise, things will get tough before medium rare (or worse) if not raw!).

- 2 large toamtoes, cut into wedges
- 4 teaspoons minced garlic
- 4 tablespoons soy sauce
- 1 tablespoon white viengar, 1
- 1 bunch cilantor, choppped finealy
- 1 cup (uncooked) basmati rice
- salt and black pepper to taste
- 1 tablespoon olive oil
- 2 cups water
Instructions

- When the steak is almost cooked, add your diced red onions and garlic, cook, until fragrant and browned, and add your sliced tomatoes. Air Fry for another 2 minutes. Make you're your tomatoes don't get too soft. It needs to keep its texture.
- Mix in the fresh diced cilantro.
- Serve the beef on a bed of rice and fries. Enjoy!
