What is Eggplant Rollatini?

Eggplant Rollatini is a dish of eggplant layered with ricotta cheese, spinach, and sometimes, added seasoned ground beef.   • Eggplant
  • Fresh Mozzarella Cheese
  • Tomatoes
  • Oregano
  • Basil
  • Tomato Sauce
  • Parmesan Cheese
  • Olive Oil

How To Make Air Fryer Eggplant Roll-Ups

  1. Start by air frying your eggplant. Preheat your air fryer to 350 degrees F, air fryer setting, for 4 minutes. Then slice your eggplant into thin slices, sprinkle some salt on top of them, let them sit for 10 minutes.
  2. Place them into the air fryer basket, brush the eggplant with olive oil. Air fry at 350 degrees F, air fryer setting, for 6 to 8 minutes, or until tender.
  3. Remove from the air fryer, and add a slice of mozzarella, tomato slice, oregano, and basil on top. Roll up, and place into a baking pan, seam side down, and air fry for another 5 to 6 minutes at 330 degrees F, air fryer setting, until the cheese has melted.
  4. Serve with tomato sauce, and Parmesan cheese.

How To Prepare The Eggplant

  • Eggplant does not need to be peeled for this recipe. For best results, slice into quarters lengthwise and brush with olive oil on both sides before air frying.
  • Cut the eggplant into thin slices, so you can easily roll them up.
  • Don’t worry about them breaking if they crack, while rolling up, you can always secure them with a toothpick.

Leftovers

Keep leftovers in an airtight container, and they’ll last about three days. YOu can quickly reheat leftovers in the air fryer or microwave.

  • 1 teaspoon salt
  • 1/2 cup mozzarella cheese
  • 1 large tomato, sliced
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 4 tablespoon olive oil
