  • Coating The Eggplant Fries: The most important thing for making sure that you get a batch of crispy Eggplant Fries is to coat the coating with cooking spray. The cooking spray will help your food cook up, nice golden brown and crispy.
  • Crowding: Do not crowd the basket. Otherwise, the hot air will not get around the food, causing it not to cook evenly or properly.
  • Keep The Breading On: Make sure that the Panko coating is really placed on the eggplant. I usually pat it down with my hand to make sure that it sticks.

This is a great recipe if you want to make these ahead of time, and then reheat. The best way to prepare them ahead of time is to cook them them, and then let cool to room temperature. Then place them into an airtight container, and store into the refrigerator.

They will last about 1 to 2 days, if they stay any longer nad the breding will get soggy.

Can I freeze eggplant fries?

This is a great recipe to make and freeze ahead. If you have ever gone to Trader Joe’s, you will notice it’s one of their selections in the freezer case.

To freeze, let them cool to room temperature, then place them onto a baking sheet, pop the baking sheet into the freezer. When h eggplant fries are frozen solid, remove and place in either a freezer bag or an airtight container.

To cook them from frozen, use the same recipe as below, but increase the time by a couple of minutes.

Description

This is one of the easiest recipes for homemade air fryer eggplant parmesan french fries. My kids love these. They are a great healthy and easy side dish, appetizer, or snack.

Ingredients 

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup panko 
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup bread crumbs (Italian), or use 1 teaspoon of Italian seasonings mixed into breadcrumbs
  • 1 taespoon garlic salt
  • 1 medium eggplant, cut into fry shapes

Optional: Marinara Sauce for serving

    Instructions

    • Peel the eggplant, and then cut it into strips, about 4 inches long and ½ inch thick
