  • Imitation crab flakes (8 oz) — the traditional choice for rangoon, and what most restaurants actually use. Lump crab meat works beautifully if you want to upgrade; drain it well and pat it dry.
  • Cream cheese (8 oz, softened) — the base of the filling. Full-fat gives the creamiest result. Let it sit at room temperature for 30 minutes or it will not mix smoothly.
  • Celery (2 stalks, finely diced) — my small twist. It adds a fresh crunch that keeps the filling from feeling heavy.
  • Green onions (4, thinly sliced) — mild onion flavor and color.
  • Soy sauce (1 tablespoon) — savory depth and umami.

How to Make Air Fryer Crab Rangoon Egg Rolls

Step 1 — Mix the filling. In a medium bowl, combine the imitation crab, softened cream cheese, diced celery, green onions, soy sauce, and Worcestershire sauce. Mix with a wooden spoon until fully blended with no streaks of white cream cheese.

Step 2 — Fill the wrappers. Lay an egg roll wrapper on a clean surface in a diamond shape, one corner pointing toward you. Spoon 3 tablespoons of filling in a horizontal log across the center. Resist the urge to add more — overfilling is the number one reason egg rolls burst.

Step 3 — Roll them tight. Fold the bottom corner up over the filling. Fold the left and right corners in toward the center. Roll upward, firmly, toward the top corner. Brush the final corner with egg wash and press to seal.

Step 4 — Preheat and air fry. Preheat the air fryer to 400°F for 3–5 minutes. Brush all sides of each egg roll with the egg wash and spray lightly with cooking spray. Arrange in the basket in a single layer with space between each one. Air fry for 8–10 minutes, flipping at the 4–5 minute mark, until deep golden brown and crisp.

Step 5 — Rest and serve. Let them sit for 2–3 minutes before serving. The filling is molten straight out of the basket. Serve with sweet chili sauce.

Recipe Tips for the Crispiest Egg Rolls

  • Soften the cream cheese properly. Cold cream cheese will not blend, and lumps tear the wrapper from the inside.
  • Three tablespoons, no more. A packed wrapper splits at the seam and leaks filling into the basket.
  • Seal every edge with egg wash. Dry corners pop open mid-cook.
  • Never crowd the basket. Egg rolls that touch will steam instead of crisp — the air needs a clear path around each one. Cook in two batches if you need to.
  • Spray, do not skip. A light mist of cooking spray is the difference between pale and golden.
  • Flip halfway. The side facing the basket browns more slowly. This one step is what gives you an evenly crisp egg roll.

Troubleshooting

My egg rolls burst open. Too much filling, or an unsealed seam. Drop to 3 tablespoons and brush the final corner with egg wash before pressing.

They came out pale and soft. Either the basket was crowded or you skipped the cooking spray. Both are easy fixes.

The filling leaked into the basket. The wrapper was not rolled tightly enough. Fold the sides in firmly so there are no air pockets before the final roll.

The outside browned before the inside warmed. Your cream cheese was still fridge-cold. Let it come to room temperature next time.

Make Ahead Instructions

Assembled egg rolls can be rolled up to 4 hours ahead. Arrange them on a parchment-lined tray in a single layer, cover tightly with plastic wrap, and refrigerate. Air fry straight from the fridge, adding 1–2 minutes to the cook time.

Can You Freeze Crab Rangoon Egg Rolls?

Yes — with one important rule: freeze them uncooked and air fry from frozen. Never thaw them first.

Cream cheese separates when it thaws, which is why thawed rangoon filling turns watery and soaks through the wrapper. Cooking straight from the freezer skips that thaw entirely, so the filling sets before it can weep.

To freeze: arrange the assembled, uncooked egg rolls in a single layer on a parchment-lined tray. Freeze until solid, about 2 hours, then transfer to a freezer bag. They keep for up to 2 months.

To cook from frozen: do not thaw. Spray with cooking spray and air fry at 380°F for 12–15 minutes, flipping halfway, until golden and heated through.

Freezing them after cooking is not worth it — the wrapper never fully recovers its crunch.

How to Store and Reheat Leftovers

Refrigerator: store cooled leftovers in an airtight container for up to 3 days.

Reheating: the air fryer is the only method worth using. Reheat at 350°F for 4–5 minutes, flipping halfway, until hot and crisp again. Frequently Asked Questions

Can I use real crab meat instead of imitation?

Yes. Lump crab meat gives a sweeter, more delicate flavor. Drain it thoroughly and pat it dry — excess moisture will make the filling loose and soak the wrapper.

Can I use wonton wrappers instead?

Do I need to preheat the air fryer?

Yes. A preheated basket sets the wrapper immediately, which is what stops the filling from leaking. Three to five minutes at 400°F is enough.

Why did my egg rolls stick to the basket?

Spray the basket lightly with cooking spray before loading, or use a perforated parchment liner. Do not use solid parchment, which blocks airflow.

Can I make these gluten-free?

Yes — use gluten-free egg roll wrappers and swap the soy sauce for tamari. Check your Worcestershire sauce as well, since some brands contain gluten.

Can I bake these instead?
