How To Make Copycat Costco Double Chocolate Muffins

Mixing dry ingredients in a large bowl with flour, sugar, cocoa, baking powder, baking soda, and salt, while preparing a muffin tin with paper liners.

Step One: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease it. In a large bowl, whisk together all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until evenly combined.

Beating eggs, whole milk, vegetable oil, and vanilla extract in a separate bowl until smooth and well combined.

Step Two: In another bowl, beat together eggs, whole milk, vegetable oil, and vanilla extract until smooth and well blended.

Folding wet ingredients into dry ingredients with a spatula, then gently mixing in semi-sweet chocolate chips, leaving a few to sprinkle on top.

Step Three: Pour the wet ingredients into the dry ingredients and gently fold together using a spatula until just combined. Avoid overmixing to keep muffins tender. Fold in semi-sweet chocolate chips, reserving a few to sprinkle on top for extra gooey pockets.

Step Four: Divide the batter evenly among the muffin cups, filling each about 2/3 full. Top with reserved chocolate chips if desired. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

Filling muffin cups two-thirds full with batter, topping with reserved chocolate chips, and baking in the oven until golden and a toothpick comes out clean.

Copycat Costco Double Chocolate Muffins Recipe Faqs

Can I make these muffins dairy-free? Yes! Use a non-dairy milk like almond or oat milk and a plant-based butter or oil substitute.

Can I use dark chocolate instead of semi-sweet chocolate chips? Absolutely! Dark chocolate will give a richer, slightly more bitter flavor, which pairs well with the sweet muffin base.

Can I make mini muffins? Yes, reduce baking time to 12–15 minutes and check with a toothpick to avoid overbaking.

Can I use a stand mixer? You can, but gently fold the ingredients at the end to avoid overmixing.

Why didn’t my muffins rise properly? Check that your baking powder and baking soda are fresh, and don’t overmix the batter. Room-temperature eggs and milk also help the rise.
