Ingredients
- 2-3 large Green Tomatoes
- 2 large eggs
- 1 cup panko breadcrumbs
- 1 cup yellow cornmeal
- 1 teaspoon Kosher salt
- 1/2 teaspoon black pepper
Instructions
- Start by washing the green tomatoes.
- Then cut the 2-3 large Green Tomatoes into about 1/4 inch slices.
- Season them with 1 teaspoon Kosher salt and 1/2 teaspoon black pepper, the salt will help draw out some of the moisture.
- Crack your 2 large eggs into a small bowl, and use a fork to mix, until frothy. Mix the 1 cup panko breadcrumbs and 1 cup yellow cornmeal. Spray your air fryer basket with cooking spray or olive oil spray.
- Dip the tomatoes into the egg.
- Then Dip them into the cornmeal/panko mixture.
- As you coat them, place them into your air fryer basket. Spray generous with olive oil.
- Set your temperature to 400 degrees F, air frying setting, set cook time for 8 to 10 minutes, flipping halfway during the cooking process.
- Plate, serve, and enjoy!

Took longer than recipe called to fry. Took 12to 14 minute. I have a 5-quart fryer and was only able to fry 4 medium tomato slices at a time. Since I was cooking for 3 people it took me an hour and had to start oven to keep them warm after doing each batch.
