Start by washing the green tomatoes.
Then cut the 2-3 large Green Tomatoes into about 1/4 inch slices.
Season them with 1 teaspoon Kosher salt and 1/2 teaspoon black pepper, the salt will help draw out some of the moisture.
Crack your 2 large eggs into a small bowl, and use a fork to mix, until frothy. Mix the 1 cup panko breadcrumbs and 1 cup yellow cornmeal. Spray your air fryer basket with cooking spray or olive oil spray.
Dip the tomatoes into the egg.
Then Dip them into the cornmeal/panko mixture.
As you coat them, place them into your air fryer basket. Spray generous with olive oil.
Set your temperature to 400 degrees F, air frying setting, set cook time for 8 to 10 minutes, flipping halfway during the cooking process.
Plate, serve, and enjoy!
