My mother was a great baker, she always baked muffins or another breakfast item on Sunday nights, and we would bring them to our walk to school on Monday mornings. This was great because Monday’s for most people are slowly starting days. So, having a portable breakfast was important, and since I’m old, we didn’t own a microwave or eat frozen foods. So, having an on the go-to breakfast was awesome in my eyes.
My kids have the same problem on most mornings, so today, I am making homemade Apple Pie Egg Rolls for their breakfast or dessert after school today.

Today I present to you, Apple Pie Stuffed Egg Rolls, easy and delicious and they used up fresh apples, my kids got while they went Apple Picking!

This is a great recipe, only two ingredients, and an air fryer. My kids loved them. I was only making them use up my leftover egg roll wrappers from my Chinese Wontons. A very great snack for the family.
- 10 egg roll wrappers doubling up, see notes
- 1 cup blueberry pie filling
- Optional: Powdered sugar
Start by laying out the egg roll. ( I used 2 because the ones I made with only 1, you could see the filling and it would easily burst)
Then add 2 tablespoons of pie filling in the center.
Then wet all of the edges with a pastry brush, then roll up, tuck the sides in.
Place in the air fryer for 5 minutes at 320 degrees F, (air fryer setting)
Plate, serve and enjoy!
