Air Fryer Blueberry Egg Rolls

Description

Crispy air fryer blueberry egg rolls made with just two ingredients — egg roll wrappers and blueberry pie filling. Ready in 15 minutes, no deep frying.

Ingredients 

  • 12 egg roll wrappers
  • 21 ounces blueberry pie filling, 1 can
  • 1/8 cup powdered sugar, optional, for dusting

Instructions

  • Lay an egg roll wrapper on a flat surface with one corner facing you. Keep remaining wrappers covered with a damp paper towel.
  • Spoon 2 tablespoons of blueberry pie filling into the center of the wrapper.
  • Fold the bottom corner over the filling, fold in both sides, and roll tightly. Brush the edges with water and press to seal.
  • Place seam side down in the air fryer basket, leaving space between each roll. Spray lightly with cooking spray if desired.
  • Air fry at 320°F for 5 to 7 minutes, until golden and crisp.
  • Let cool 2 to 3 minutes, dust with powdered sugar, and serve.

Notes

  • Do not overfill — 2 tablespoons per wrapper is the limit.
  • Use a silicone liner if the wrappers stick to the basket.
  • Reheat leftovers at 350°F for 2 to 3 minutes.
