- Ripe bananas: You’ll need two, and they should be soft and heavily speckled. Overripe bananas mash easily and bring the most natural sweetness and banana flavor.
- Yellow cake mix: Vanilla or butter golden cake mix works just as well. Do not prepare the mix; you’re using it dry.
- Unsalted butter: This is what turns the dry cake mix into that buttery, golden topping, so don’t skimp.
- Ground cinnamon: Optional, but it gives the cake that classic banana bread warmth.
- Chopped walnuts or chocolate chips: Optional. Walnuts for a banana-nut-bread vibe; chocolate chips if you’re feeding kids (or me).
- Brown sugar: Optional. Sprinkle a little over the top for extra caramelization and sweetness.
How to Make Banana Bread Dump Cake in the Air Fryer

Step One: Mash the bananas in a bowl with a fork until smooth. A few small lumps are fine.

Step Two: Grease an air fryer-safe cake pan or line it with parchment paper. This cake is sticky on the bottom, so don’t skip this step.

Step Three: Spread the mashed bananas across the bottom of the pan in an even layer.

Step Four: Sprinkle the dry cake mix evenly over the bananas. Do not stir it in — the layers are what make a dump cake work.

Step Five: Drizzle the melted butter over the cake mix, trying to cover as much of the surface as you can. Any dry spots will stay powdery, so take your time here.

Step Six: Top with brown sugar, cinnamon, chopped walnuts, or chocolate chips if using.

Step Seven: Preheat the air fryer to 350°F (175°C) for 3 minutes.
Step Eight: Place the pan in the air fryer basket and cook for 20–25 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean.

Air Fryer Banana Bread Dump Cake Tips
- Cover the cake mix completely with butter. This is the number one dump cake mistake. If you see dry patches after drizzling, use a spoon to gently nudge the butter around or add another tablespoon or two.
- Use the ripest bananas you have. Green-tinged bananas won’t mash well and won’t have enough sweetness to carry the cake.
- Check your pan size. A 6- or 7-inch round cake pan fits most basket-style air fryers. If your pan is smaller and the layers are thicker, add 3–5 minutes to the cook time.
- Tent with foil if the top browns too fast. Air fryers with a top heating element can brown the surface before the center is set. Loosely lay a piece of foil over the pan for the last 5–8 minutes if needed.
- Don’t overcrowd the basket. Leave room around the pan for the hot air to circulate — that’s what gives you the crisp top.
- Let it rest. The banana layer is molten straight out of the air fryer. A few minutes of cooling lets it set up so you can scoop clean servings.

Variations

- Peanut Butter Swirl – Dollop 2–3 tablespoons of peanut butter over the bananas before adding the cake mix.
- Bananas Foster Style – Add the brown sugar and a splash of rum extract to the melted butter before drizzling.
Storing, Freezing & Reheating
- Storing: Cover and refrigerate leftovers for up to 4 days. The topping will soften a bit as it sits.
- Freezing: Wrap individual portions tightly and freeze for up to 2 months. Thaw overnight in the refrigerator.
- Reheating: Pop a slice back in the air fryer at 300°F for 3–5 minutes to re-crisp the top, or microwave for 20–30 seconds if you’re in a hurry.
