  • All-Purpose Flour: For work surface.
  • Egg & Milk: For a simple egg wash
  • Ripe Peaches: Peeled and chopped, these provide a juicy and sweet filling that is the heart of the hand pies.
  • Granulated Sugar: Adds sweetness to the peaches, enhancing their natural flavor
  • Corn Starch: Thickens the peach filling, preventing it from becoming too runny during cooking
  • Ground Cinnamon: Infuses the filling with a warm, aromatic spice that complements the peaches perfectly.

How To Make Air Fryer Peach Hand Pies

Follow the simple steps to make a batch of homemade air fried peach hand pies:

Prepare the filling: Wash, rinse, and dry peaches thoroughly. Peel skin from peaches and slice, removing pits. Dice into small cubes. In medium bowl, gently combine peaches with sugar. Cover and store for one hour to allow juices to release from peaches. Drain juice from the peaches into a heavy-bottom saucepan and whisk in the cornstarch, cinnamon, and salt. Ensure mixture is well-combined. Cook over medium-low heat until the mixture starts simmering. Stir continuously and cook for two to three minutes – until mixture thickens into a syrup. Stir in lemon juice, almond extract and vanilla extract and remove from heat.

Prepare the Air Fryer: Preheat the Air Fryer to 350 degrees F. Spray basket or tray with vegetable oil to prevent sticking.

Assemble the hand pies: Remove the pie dough from the refrigerator. Unroll pie dough on flat, lightly floured surface. Cut pie dough once in half horizontally and once in half vertically. Use a pastry brush to liberally coat pie dough in egg wash.
Scoop one to one and a half tablespoon of the homemade peach filling into one of the dough sections. Fold one side over the other – making a pocket shape, and press ends together with a fork to seal. Repeat this for each one of the dough sections.
Brush top of pies with egg wash using pastry brush, and place into air fryer basket (or onto tray).

Air Fry: Set the cook time for 10-15 minutes in air fryer, turning once at the halfway mark, or until flaky and golden. Remove from air fryer and sprinkle with raw, turbinado or demerara sugar.

  • Spray your basket with either cooking spray or line it with parchment paper, this way the pies do not stick.
  • Do not crowd the basket, otherwise the dough will not crisp up.
  • This recipe will work with any Air Fryer, including the Ninja Foodi, Instant Pot Crisp Lid and the Instant Pot Vortex.
  • If you do not want to add an egg wash, skip and spray with cooking pastry. which will also let the dough crisp up.

How To Store Air-Fried Peach Hand Pies

Peach Pie Filling:
