This Air Fryer Grilled Cheese delivers an incredibly even, golden-brown crunch that is impossible to achieve in a standard frying pan. By using a specialized air-flow method, the cheese melts into a perfectly gooey center while the bread transforms into a shatter-crisp delight in just minutes.

The Air Fryer Grilled Cheese is a total game-changer for anyone seeking the ultimate comfort food with minimal effort.
Unlike traditional stovetop methods that often result in uneven browning or cold, un-melted centers, the air fryer uses 360-degree convection heat to envelop the sandwich in a uniform, “deep-fried” crunch without the excess oil. By swapping standard butter for a thin layer of mayonnaise and utilizing high-velocity air, you can achieve a perfectly golden, crispy crust and a gooey, professional-grade cheese pull in under eight minutes.

Why You Will Love This Recipe!
- Crispy golden edges with gooey, melty cheese inside.
- Ready in minutes, perfect for quick weeknight meals.
- Customizable with any cheese or bread you prefer.
- Kid-friendly comfort food that adults also love.
- Air fryer gives perfectly even cooking every time.
Ingredients Needed

- Bread slices: Soft bread perfect for golden, crispy sandwiches.
- Butter or Mayo: Adds flavor and ensures a perfectly golden crust.
- Cheddar cheese slices: Sharp cheddar melts evenly with gooey texture.
- Mozzarella cheese slices: Creamy cheese for stretchy, melty delicious bites.
- Optional extras: Tomato, bacon, or herbs for added flavor.
Recipe Variations
- The Mayo Secret: Mayonnaise is superior to butter for the air fryer. It has a higher smoke point, leading to a perfectly even, deep golden crust without the risk of burning.
- The Triple-Cheese Blend: I recommend a mix of Sharp Cheddar (for flavor), Gruyère (for sophistication), and Mozzarella (for that iconic “cheese pull”).
How To Make The Best Air Fryer Grilled Cheese

Step 1: Start by spreading mayonnaise or butter to each side of the bread. I like to place my grilled cheese on a trivet. Place one slice of bread (mayo side down) and 2 pieces of cheese on top of the bread.
Step 2: Put the other slice of bread down. Place 4 toothpicks in each corner of the bread—set the air fryer temperature to 400 degrees F and air fry for 5 minutes. Flip the grilled cheese with mayo and cook for another 3 minutes.

Air Fryer Grilled Cheese Recipe Tips
- Don’t add too much to the basket. Overcrowding the air fryer basket will affect the results. Instead, leave space around sandwiches so the air can circulate correctly.
- Go for thick bread. In a pinch, you can opt for thin bread, but whenever possible reach for bread that has some bulk to it. Texas toast works wonderfully!
- Make sure not to saturate the bread with the mayo or it will be more soggy and won’t toast up the way.
- Don’t forget the toothpicks. I know it’s tempting to skip them, but the bread may fly off if you don’t secure it.
- Use the cooking time as a guide. Depending on bread thickness, the sandwiches can cook faster or slower than in the recipe card. So it’s important when you air fry a grilled cheese sandwich that you keep a close watch so things stay toasty, not burnt.
Storing and Reheating Instructions
- Storing Instructions: Let the grilled cheese cool completely before storing. Place in an airtight container or wrap tightly in foil. Keep in the refrigerator for up to 2 days.
- Reheating Instructions: Reheat in the air fryer at 350°F (175°C) for 3–5 minutes until warm and crispy. You can also use a skillet over medium heat for 2–3 minutes per side to restore crispiness.

Easy Air Fryer Grilled Cheese Recipe Faqs
Why does the bread blow off my sandwich in the air fryer? Because air fryers use high-velocity fans, lightweight bread can easily lift and fly toward the heating element. To prevent this, secure your sandwich with a toothpicks or place a small Air Fryer Rack on top to weigh it down while allowing air to circulate.
Is it better to use butter or mayo for air fryer grilled cheese? While butter is traditional, mayonnaise is actually superior for the air fryer. Mayo has a higher smoke point, which allows the bread to get a deeper golden-brown color and a more even, and a crispy crunch without the risk of burning.
Do I need to flip the sandwich halfway through? Yes. To ensure a uniform crunch on both sides, you should flip the sandwich at the 3 or 4-minute mark. This ensures the bottom side doesn’t get soggy from the cheese melting downward.
What is the best cheese for a perfect cheese pull? For the ultimate cheese pull, use a combination of low-moisture Mozzarella (for stretch) and Sharp Cheddar (for flavor). Avoid pre-shredded cheeses in bags, as they are coated in potato starch which prevents them from melting smoothly.
Can I use frozen bread for an air fryer grilled cheese? Absolutely! You don’t even need to thaw it. Just add 1 to 2 minutes to the total cook time. The air fryer will thaw and crisp the bread simultaneously, making it a great option for a quick last-minute meal.

What kind of trivet do you have?
Rose T
I was skeptical about mayo on the bread. WOW, I am thrilled I went ahead with the recipe. I made as written and although it was overdone we could tell this was going to be good. I decreased the time and temperature and it is perfect for us. Thank you for the well written recipe.
Laurie
The funniest thing is my youngest son, absolutely hates mayo, he would never eat it, if you could taste the smallest taste of mayo. I am very happy you enjoyed it, Laurie

What purpose does the trivet serve?
Penny
I’ve used spray coconut oil on the outside of the bread…also yummy!

Very delish

What are the toothpicks for?
Laurie
Depending on your air fryer, you might need them to weigh it down.
Abby
Very good! 5 minutes was way too long (or maybe 400° was too hot) so I slightly burned the top side of the sandwich. Overall, great recipe!!
Nancy
Instead of toothpicks, I place the trivet over the sandwich. There’s not much mayo in the air fryer basket, so I just wipe it with a damp paper towel. Best sandwich ever.
Tina
Very good recipe! I did find it seemed to cook fast with each sandwich so I reduced the cook time to 4 and 2 for my last couple. Overall a game changer! Made for the first time with our nephew visiting and he asked for seconds before the first one was gone. Definitely keeping in the rotation ?
