Instant Pot, Pumpkin and Sausage Pasta Dinner

A really easy dinner, with a great fall twist, this sauce includes Pumpkin!! It gives a great richness to the flavor.

  • 2 tablespoons olive oil
  • 1/2 cup onion
  • 1 pound ground sausage
  • 1 cup canned pumpkin
  • 2 bay leaves
  • 1 tablespoon ground sage
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 3 cups vegetable or beef broth
  • 2 cups Penne pasta (other types can be used)


  1. Start by adding the olive oil to the Instant Pot

  2. Then press the saute button, allow the Instant Pot, to heat for about 1 minute.

  3. Add the diced onions, using a spatula, to move them every few minutes, so they don't burn.

  4. Then add the sausage, breaking it up while it cooks.

  5. Continue to saute, until it's cooked (all brown)

  6. Add the pumpkin, and mix it in with the sausage.

  7. Then add the spices in,

  8. Then add the vegetable or beef broth.

  9. Then add the pasta.

  10. Note: The most important thing about cooking pasta is that the water line (or line with liquid, because most of the time, it's not water) needs to be above the line for the pasta. So if you need to add more broth or water, add it, otherwise, you will end up with dried pasta.

  11. Add your lid, making sure it's on the sealed position and set the timer for 3 minutes after doing a quick release.

  12. Once the pressure has been released, and the lid can easily be removed, remove, and mix.

  13. Plate, serve and enjoy!
