- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon chipotle powder, adjust to taste
- ½ teaspoon salt, or to taste
Instructions
- Rinse the rice under cold water until the water runs clear.
- Turn the Instant Pot to sauté mode. Add olive oil, then sauté the rice for 2-3 minutes until slightly toasted.
- Add the water (or chicken broth), chipotle powder, salt, and stir.
- Close the lid, set the valve to sealing, and cook on high pressure for 4 minutes.
- Let the Instant Pot naturally release pressure for 10 minutes, then quick release any remaining pressure.
