How To Make Air Fryer Taco Egg Rolls

Step One: In a bowl, combine the cooked ground meat, cheese, black beans, corn, tomatoes, green chilies (if using), and green onions or cilantro. Season with salt and pepper to taste.

Step Two: Lay an egg roll wrapper on a clean surface, with one corner pointing toward you (diamond shape). Spoon about 2 tablespoons of the filling onto the lower part of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal the filling inside. Use a little water to seal the edges.

Step Three: Preheat your air fryer to 390 degrees F (200°C), for 3-5 minutes. Lightly spray the air fryer basket with cooking spray. Place the egg rolls in the basket in a single layer, ensuring they don’t touch (cook in batches if needed). Lightly spray the tops of the egg rolls with cooking spray or brushing them with a small amount of oil. Set cook time for 8-10 minutes or until golden brown and crispy, flipping halfway through.

Step Four: Allow the egg rolls to cool for a few minutes before serving. Serve with salsa, guacamole, and sour cream for dipping.

Recipe Tips and Substitutions
- Add Extra Flavor: For a richer taste, add a teaspoon of taco seasoning or chili powder to the filling mix.
- Protein Substitutes: Swap ground beef for ground turkey, chicken, or even vegetarian options like black beans or crumbled tofu for a lighter or plant-based version.
- Cheese Options: While cheddar cheese works great, feel free to experiment with other varieties like Monterey Jack, Mexican blend, or even a spicy jalapeño cheddar for extra flavor.
- Spice It Up: Add finely chopped jalapeños or a few dashes of hot sauce to the filling for an extra kick.
- Vegetable Variations: You can add other vegetables like diced bell peppers, zucchini, or corn for added texture and flavor.
- Egg Roll Wrapper Alternatives: If you prefer a gluten-free option, look for gluten-free egg roll wrappers or use rice paper for a lighter, crispier option.
- Dipping Sauces: Serve these egg rolls with a variety of dipping sauces like salsa, sour cream, guacamole, or even a creamy cilantro-lime dressing to complement the flavors.
Storing, Freezing & Reheating
- Storing: Store leftover Air Fryer Taco Egg Rolls in an airtight container in the refrigerator for up to 3 days. Be sure to let them cool completely before storing to preserve their crispiness.
- Freezing: To freeze, place the un-cooked egg rolls in a single layer on a baking sheet and freeze until solid. Once frozen, transfer them to a freezer-safe bag or container for up to 3 months.
- Reheating: Reheat leftover egg rolls in the air fryer at 350°F for 3-5 minutes to restore their crispy texture. You can also reheat them in the oven at 375°F for 8-10 minutes, flipping halfway through.
