In a bowl, combine the cooked ground meat, cheese, black beans, corn, tomatoes, green chilies (if using), and green onions or cilantro. Season with salt and pepper to taste.
Lay an egg roll wrapper on a clean surface, with one corner pointing toward you (diamond shape). Spoon approximately 2 tablespoons of the filling onto the lower part of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing the edges with a little water.
Preheat your air fryer to 390°F (200°C).
Lightly spray the air fryer basket with cooking spray. Place the egg rolls in the basket in a single layer, ensuring they don’t touch (cook in batches if necessary). Lightly spray the tops of the egg rolls with cooking spray or brush them with a bit of oil. Air fry for 8-10 minutes, or until golden brown and crispy, flipping halfway through.
Allow the egg rolls to cool for a few minutes before serving. Serve with salsa, guacamole, and sour cream for dipping.
