Preheat the air fryer to 390℉, air fryer setting. Wash and peel the sweet potatoes with a vegetable peeler to remove the skin. Set the mandolin to 2 mm. Do a few test slices to ensure your thickness is where you want it. The sweet potatoes should be as thin as a dime. They won’t crisp up after cooking if you slice them too thick.
Slice the sweet potatoes being careful of the blade. Be sure to use the safety guard that came with your mandolin or a cut-resistant glove.
